Steps

Basic Sauteed Yellow Squash

  1. Preheat a pan over medium high heat. Add the oil and butter, and allow butter to melt before adding in the squash and bell peppers.
  2. Sauté the vegetables for 12-14 minutes, stirring occasionally. Squash should be tender when finished.
  3. Add in the parsley and scallions. Continue to cook for a few more minutes, and then remove the pan from heat.
    • Serve immediately, adding salt and pepper to taste.

Grilled Yellow Squash with Garlic Oil

  1. Preheat a grill on medium heat. On a cutting board, cut the squash horizontally into long strips that are between {{safesubst:#invoke:convert|convert}} to {{safesubst:#invoke:convert|convert}} thick.
  2. Pour the olive oil into a small pan and heat under a medium flame. Add the garlic cloves, and cook until the garlic begins to sizzle.
  3. Use a basting brush to coat each slice of squash with the garlic oil. Season with salt and pepper, and then place the squash onto the grill.
  4. Grill on each side for 5-10 minutes. Add more olive oil if necessary to prevent the squash from sticking to the grill. Squash should be browned and tender when finished.
    • Serve the squash warm as a side dish or allow them to cool before adding them to a salad.

Roasted Yellow Squash Salad

  1. Preheat the oven to 475 degrees F (246 degrees C). Place the squash in a single layer onto two rimmed baking sheets.
  2. Mix two tablespoons of olive oil, garlic, salt, and pepper in a small bowl. Drizzle the mixture over the squash and toss them to evenly coat.
  3. Roast the vegetables for 55 to 60 minutes, flipping them halfway through. Remove the baking sheets from the oven and allow them to cool.
  4. Transfer the squash and garlic to a large bowl. Add the parsley, lemon juice, and one tablespoon of olive oil. Toss the mixture together, adding salt and pepper to taste.
  5. Serve immediately or refrigerate for up to one day. Drain any liquid after refrigerating.
