Waffle Breakfast Nachos
- 8 waffles
- 1 pound (450 grams )breakfast sausage, crumbled and browned
- 1 tablespoon (15 mL) maple syrup
- 2 cups (475 mL) shredded sharp Cheddar
- 6 eggs, cooked sunny-side up or over easy
- 1 thinly sliced avocado
- 1/2 cup (120 mL) quartered cherry tomatoes
- 3 scallions (white and light green parts only)
- 1 thinly sliced jalapeno
- 1/4 cup (60 mL) chopped fresh cilantro
Hash brown Breakfast Nachos
- 12 frozen hash brown patties
- 1 cup (240 mL) of shredded Cheddar
- 1 cup (240 mL) of Shredded Monterey Jack
- 6 large scrambled eggs
- 4 cooked, chopped strips of bacon
- Salt and pepper
- 1/2 cup (120 mL) prepared guacamole
- 1/4 cup (60 mL) salsa
Spicy Egg Breakfast Nachos
- 1 (15-ounce/420 ounces)) can pinto beans
- 1/4 (60 mL) cup water
- 3/4 teaspoon (about 3.75 mL) chili powder
- 4 large eggs
- 2 teaspoons (10 mL) Mexican-style hot sauce
- Freshly ground black pepper
- 1 tablespoon (15 mL) unsalted butter
- 1 cup (240 mL) grated Monterey Jack cheese
- 3 ounces (84 grams) tortilla chips (about 2 handfuls)
- 1/3 cup (80 mL) salsa

Making Waffle Breakfast Nachos
- Cut your waffles into triangles. Take your eight waffles and cut them in half. Create triangular shapes that look something like tortilla ships.
- Bake your waffles. Arrange your waffles on a greased baking sheet. Bake your waffles for five to seven minutes at 350 degrees Fahrenheit (176 degrees Celsius).
- Top your waffles with syrup, sausage, and cheese. Drizzle the waffles with maple syrup. Then, distribute your sausage and cheese evenly over the waffles.
- Broil your nachos. Place your waffles back in the oven directly under the broiler. Cook the nachos under the broiler for five to seven minutes until the cheese is just melted.
- Finish topping your nachos. Remove the waffles from the oven. Distribute the cooked eggs, tomatoes, avocado slices, scallions, jalapeño, and cilantro evenly over your waffles. They are now ready to serve.
Making Hash Brown Breakfast Nachos
- Cook your hash browns. Place your frozen hash browns on a baking sheet. Bake them at 425 degrees Fahrenheit (about 218 degrees Celsius) for 20 to 25 minutes. When done, the hash browns should be golden brown.
- Slice your hash browns. Remove your hash browns from the oven. After they cool to the touch, cut each patty in half diagonally.
- Add your toppings. Sprinkle both types of cheese evenly over the hash browns. Then, top your hash browns with eggs, bacon, salt, and pepper.
- Bake until the cheese is melted. Toss your hash browns back into the oven. Bake for an additional 10 minutes or until the cheese is melted.
Making Spicy Egg Breakfast Nachos
- Cook and flavor your beans. Drain your pinto beans and then place them in a sauce pan over medium heat. Add the water, chili powder, and salt. Stir everything together and cook the beans for about five minutes, stirring occasionally.
- Prepare your eggs. Beat your eggs with a fork until they form a smooth, even mixture. Mix in the hot sauce, as well as a pinch of salt and pepper.
- Melt your butter. Place your butter in a sauce pan over medium heat. Melt the butter until it's foamy. This takes about two to three minutes. Then, swirl the butter in the pan to distribute evenly throughout the bottom of your sauce pan.

- Add the cheese to the eggs. Sprinkle your cheese evenly over the eggs. Stir the eggs and cheese together until the cheese is distributed evenly throughout the eggs.
- Divide and top your chips. Divide your chips between two plates. Then, distribute your pinto beans even over the eggs.
- Add the eggs to the chips and beans. Take the egg and cheese mixture. Distribute this evenly over the chips and beans. Your nachos are ready to serve.
- If you want, you can top your nachos with sour cream or guacamole.
