Ingredients
- 2 boneless chicken breasts
- 2 limes
- 1/2 tablespoon caster sugar
- 2 teaspoon dried oregano
- 1/2 teaspoon cinnamon powder
- 2 onions
- 1 red pepper
- 1 orange pepper
- 1 green pepper
- 3 tablespoons vegetable oil
- Parsley (for garnishing)
- Salt and pepper
Steps
- Prepare the vegetables. De-seed the peppers. Cut them and the onions into thin slices. Place the slices onto a plate.
- Slice the chicken into thin slices of {{safesubst:#invoke:convert|convert}} long.
- Make the marinade. Use the grater against one of the lime to get grated rind. Place the shavings into a bowl and then squeeze the juice from both limes. Add the cayenne, oregano, caster sugar, cinnamon, and salt/pepper into the bowl. Mix everything together.
- Place the chicken into the marinade bowl and make sure that all the pieces are coated. Place the bowl on the side for about 30 minutes. Just a tip - the longer you leave it in the marinade, the more juices will soak into the chicken pieces.
- Heat an oiled pan over a high heat. Add the chicken and marinade to the pan. Cook everything until the chicken is tender or for about 5 minutes.
- Add the vegetables into the pan. Stir and cook for 3 minutes until the vegetables are soft. Add more seasoning if needed.
- Garnish and serve. Place the chicken mixture into a warmed flour tortilla with guacamole, sour cream, and salsa. Roll the wrap and garnish with parsley.
Tips
- Make sure that you clean all knives before and after cutting raw meat.
