Make Chicken Fajitas

A traditional Mexican dish full of color and flavor - a real favorite with everyone.

Serves 6.

Ingredients

  • 2 boneless chicken breasts
  • 2 limes
  • 1/2 tablespoon caster sugar
  • 2 teaspoon dried oregano
  • 1/2 teaspoon cinnamon powder
  • 2 onions
  • 1 red pepper
  • 1 orange pepper
  • 1 green pepper
  • 3 tablespoons vegetable oil
  • Parsley (for garnishing)
  • Salt and pepper

Steps

  1. Prepare the vegetables. De-seed the peppers. Cut them and the onions into thin slices. Place the slices onto a plate.
  2. Slice the chicken into thin slices of {{safesubst:#invoke:convert|convert}} long.
  3. Make the marinade. Use the grater against one of the lime to get grated rind. Place the shavings into a bowl and then squeeze the juice from both limes. Add the cayenne, oregano, caster sugar, cinnamon, and salt/pepper into the bowl. Mix everything together.
  4. Place the chicken into the marinade bowl and make sure that all the pieces are coated. Place the bowl on the side for about 30 minutes. Just a tip - the longer you leave it in the marinade, the more juices will soak into the chicken pieces.
  5. Heat an oiled pan over a high heat. Add the chicken and marinade to the pan. Cook everything until the chicken is tender or for about 5 minutes.
  6. Add the vegetables into the pan. Stir and cook for 3 minutes until the vegetables are soft. Add more seasoning if needed.
  7. Garnish and serve. Place the chicken mixture into a warmed flour tortilla with guacamole, sour cream, and salsa. Roll the wrap and garnish with parsley.
