Ingredients
- 1 1/2 cups (190 grams) all-purpose flour
- 1/3 cup (70 grams) granulated sugar
- 1/4 teaspoon salt
- 4 teaspoon active dry or rapid rise yeast
- 2/3 cup (155 ml) warm milk
- 3 tablespoons vegetable oil
- 1/2 teaspoon vanilla extract
- 1 large egg
Filling/Topping
- 3 tablespoons (45 grams) butter, room temperature
- 3/4 cup (165 grams) brown sugar
- 1 teaspoon ground cinnamon
Icing
- 1 cup (120 grams) powdered sugar
- 1-2 tablespoons milk or cream
Steps
- Lightly grease an 8x8 inch (20cm) square baking pan. Use margarine or non-stick cooking spray.
- Mix the flour, sugar, and salt in a large bowl.
- Combine the warmed milk and yeast in a measuring cup. Dissolve the yeast completely.
- Add the yeast-milk mixture, egg, vegetable oil, and vanilla extract to the flour mixture. Mix together thoroughly.
- Pour the mixture into the baking pan. Set aside for at least 15 minutes.
- Make the topping. Stir together the brown sugar, butter, and cinnamon together until you have a crumbly mixture.
- Sprinkle the topping over the pan mixture. You can either swirl it in or lightly press it down.
- Place the pan in the cold oven. You'll be baking it while the oven is preheating. Bake the mixture for 30 minutes at 350ºF/180ºC.
- Check for doneness. The cinnamon bread should spring back when lightly pressed. Set aside to cool for 30 minutes.
- Make the icing by whisking the milk and powdered sugar together. Drizzle the icing on top of the bread.
- Serve the cinnamon bread warm. Any leftovers can also be reheated in the microwave for a few seconds.
