Make Easy Clotted Cream
The cream recipes provided here are not for real clotted cream. Instead, they are a type of imitation clotted cream, to try to make up for the fact you don't have real clotted cream to hand when your guests drop in unexpectedly for afternoon tea. The cream recipes here will produce a solid texture and still taste great, so you may just be forgiven for not having the real clotted cream!

Ingredients
Method 1:
- Makes 1 1/2 cups
- 8 oz. package cream cheese, softened
- 1/2 cup sour cream
- 2 tablespoons powdered sugar
Method 2:
- 1 cup heavy cream, room temperature
- 1/2 cup sour cream, room temperature
- 1 tablespoon confectioner's sugar
Steps
Cream cheese imitation clotted cream
- In a small bowl, beat the cream cheese with an electric mixer until fluffy.
- Mix in the sour cream and sugar until smooth. Spoon into a serving bowl; refrigerate until serving time.
- Enjoy. Use as an accompaniment to fruit salad, on scones and in other dishes requiring thick cream.
Heavier-than-usual cream
- Whisk the heavy cream until it turns into soft peaks.
- Whisk in the sour cream and the powdered sugar. Beat the ingredients together until they thicken.
- Place the mixture into the refrigerator and chill for at least 4 hours, covered. Once properly chilled, it's ready to use.
Tips
- You can add 1/2 teaspoon vanilla extract/essence if you want.
