Make Okonomiyaki

Okonomiyaki is a popular Japanese dish that is also sometimes called Japanese pancakes or Japanese pizza. However, it's quite different from both pancakes and pizza. The name means "cooked how you like it", so you can use whatever fillings you like!

Ingredients

  • 5 Tbsp plain flour
  • 1 Tsp baking powder
  • 70 ml water [or Dashi stock)
  • 1 egg
  • 2 cups shredded cabbage
  • Any other veggies (ie. corn and spring onions) or meats (ie. cooked bacon or ham) that you like.
  • Cooking oil (little for frying)
  • Toppings:
    • Whole egg mayonnaise (or Japanese mayonnaise)
    • BBQ sauce (or Okonomiyaki sauce)
    • Seaweed flakes/dried fish flakes (optional)

Steps

  1. Mix the ingredients. Mix the flour, baking powder, and water (a little at a time)until it makes a smooth batter. Then mix in the egg. Add shredded cabbage, and any other ingredients you like. Mix.
  2. Prepare your cooking surface. Add a little vegetable oil to a frying pan and heat to medium-high heat.
  3. Cook for a few minutes. Or until side start to brown. Flip and cook another few minutes.
  4. Add toppings, cut and serve.



Tips

  • You may want to use two spatulas when flipping, as it will be quite large and soft in the middle. You may, however, make the pieces as large or small as you like.
  • Okonomiyaki has as many variations as there are people who eat it! Play around with the recipe. You can also find out about regional specialties. There are recipes for okonomiyaki containing noodles of various kinds (such as yaki soba noodles), an additional fried egg, looser batter, etc.
  • Some ingredients include thinly sliced meats (pork, bacon, beef), fish, shrimp, tuna, squid, octopus, carrots, blocks of mochi, daikon, bean sprouts, cheese, puffed rice, bell peppers, garlic, tomato, and onion. Use anything you like!

Warnings

  • The amount of meat and veggies you use will depend on how many ingredients you're using, as well as how you like the consistency. Be conservative when adding these to the batter, but make sure you buy enough in case you need to add more.
  • Be careful not to burn yourself on the cooking surface.
