Make Seitan Goulash
This is a vegan dish that makes great comfort food for the cold winter season. It's warm, filling and tasty. This recipes explains how to make the seitan first, then how to add it to make the goulash. This dish goes well with crusty bread and a salad as a side dish.

Ingredients
Seitan:
- 150g of powdered gluten (vital wheat gluten)
- 1 glass of water
- 1 clove of garlic, finely chopped
- 1 tablespoon of paprika
- 2 tablespoons of brewer's yeast
- Pepper, freshly grated, to taste
- 1 tablespoon soy sauce or tamari sauce
- 1 vegetable stock cube, crumbled
- Bay leaf
- Sprig of rosemary
- Sprig of thyme
Goulash:
- 4 onions, sliced
- 500ml of vegetable stock
- 4 tablespoons of tomato concentrate
- 2 tablespoons of paprika
- 2 teaspoons of cornflour
- 500ml of soy cream
- Salt and pepper to taste
- 1 tablespoon cooking oil
Steps
Making the Seitan
- Add all of the seitan ingredients to the mixing bowl. Stir to combine. Keep stirring until the mixture forms a smooth and stretchy dough.
- Remove from the mixing bowl. Cut into six even pieces. Set aside for use shortly.
- Add the vegetable stock to a large cooking pot. Add the bay leaf, some thyme leaves and rosemary leaves. Bring to the boil.
- Add the seitan pieces to the boiling water. Drop to a simmer and simmer for 15 to 20 minutes. Then remove from the heat, drain the pieces out and set to one side. Keep the drained stock as well, for reuse in the next part of the recipe.
Making the Goulash
- Add the oil to a wok. Heat the oil and add the onion slices. Fry gently.
- Add the well-drained seitan pieces. Fry until golden each side.
- Pour the already cooked stock back into the cooking pot. Bring to the boil, then drop to a low heat.
- Add the paprika, tomato concentrate and cornflour. Stir well in the pot and allow to cook over low heat for about an hour. Stir frequently.
- Serve when thickened. Serve with plain rice or couscous, and some crusty bread. Just before serving, add a little soy cream to each portion.
