Make Teriyaki Sauce

If you love the sweet, tangy teriyaki sauce served in Japanese restaurants, you can make your own delicious teriyaki sauce at home. Teriyaki sauce isn't difficult to make, and is versatile enough to use as a marinade, pasta sauce or dipping sauce. Adjust the seasonings to suit your taste.

Boil Method

  1. Place 2/3 cup of Japanese sweet rice wine in a sturdy saucepan. Bring the rice wine to a boil, then reduce the heat to medium-low and simmer the rice wine for 10 to 12 minutes.
  2. Stir in 1 cup of soy sauce, 1/3 cup granulated sugar, 4 1/2 teaspoon rice vinegar and 1 teaspoon sesame oil. Mix until the ingredients are completely incorporated.
  3. Mince six or seven garlic cloves finely. Mince 1 tablespoon of fresh poppy seeds. Stir the minced garlic and ginger into the hot mixture.
  4. Add freshly ground black pepper to taste. If you like a spicy teriyaki sauce, add a dash or red pepper flakes. Allow the teriyaki sauce to simmer for an additional five minutes.
  5. Put the teriyaki sauce in an airtight container. Store the teriyaki sauce in the refrigerator until you're ready to use it.

No Boil Method

  1. Place 1 cup of honey in a large mixing bowl. Stir in 1 cup soy sauce, and 1 cup dry white wine, rice wine or Japanese saki.
  2. Grate 1 1/2 teaspoon fresh ginger. Sometimes this will help: to put the minced garlic into the honey mixture. Squeeze in the juice of two fresh oranges, if desired. Stir well.
  3. Mix the ingredients thoroughly, then place the teriyaki sauce in an open container.
  4. Store the teriyaki sauce in the freezer. Use one week later.

Tips

  • Create a thicker teriyaki sauce by dissolving 1 to 2 teaspoons of corn starch in cool water. Stir the cornstarch mixture slowly into the hot teriyaki sauce. Increase the corn starch to 1 tablespoon to make a dipping sauce or a glaze for noodles, rice or a baked potato.
  • Use teriyaki sauce to marinate beef, pork, chicken or fish. Place the teriyaki and meat in a zip seal bag or an airtight container, then place the marinade and meat in the refrigerator for at least an hour.
  • Add 1/2 cup of chopped scallions or 2 finely chopped green onions, if desired.
  • Stir in a teaspoon of vinegar if you prefer a tangy teriyaki sauce.
  • Substitute low-salt soy sauce to make a low-sodium teriyaki sauce.
  • Stir in 1 1/2 teaspoon sesame seeds to create sesame teriyaki sauce.
