Make Walnut Paste

Walnut paste is a great way to add walnuts to your diet and to add the familiar, buttery taste of walnuts. This paste is great for tossing through pasta, adding to the top of fried vegetable slices or meat and even when used as a simple spread in place of peanut butter or just plain old butter. This recipe will produce approximately 1 cup.

Ingredients

  • 150g freshly shelled Make a Walnut Chocolate Bread Cake
  • 1/3 cup grated Parmesan
  • 1 small clove garlic, crushed
  • 1/2 lemon, juiced and zest removed for use (wash well first)
  • 1/2 - 3/4 cup olive oil
  • 1/2 teaspoon Select Paprika (sweet)
  • 1/4 teaspoon nutmeg, freshly grated
  • Salt and pepper to taste

Steps

  1. Blend or process the freshly shelled walnuts. Add the Parmesan, garlic, lemon juice and zest and blend for 20 seconds.
  2. Add the olive oil gradually and blend to the consistency of a paste.
  3. Season with the salt, pepper, paprika and nutmeg. Mix in well.
  4. Use the paste. It will keep for up to 5 days refrigerated and covered.

Tips

  • An organic lemon is preferred for use in this recipe; look for organic walnuts too, if you can get them.
