Make Whoopie Pie

If you have a sweet tooth and a few extra ingredients in the house, try whipping these up in a hurry. This recipe makes about 20 individual cakes, which equates to 10 pies. A vegan recipe is also provided.

Ingredients

Cake

  • ½ cup (102.5g) shortening
  • 2 cup (200g) sugar
  • 1 egg
  • ½ cup (113g) cocoa
  • 3 cups (250g) flour
  • 1 ½ (7g) teaspoons baking soda
  • ½ (3g) teaspoon salt
  • 1 cup (237ml) milk
  • 3 (5ml) teaspoon vanilla

Filling

  • 1 ½ cups (150g) confectioners' (powdered) sugar
  • ½ cup (102.5g) shortening
  • ¼ cup (57g) butter
  • 1 cup (227g) marshmallow fluff
  • ½ (2.5ml) teaspoon vanilla

Steps

Cake

  1. Mix the cream shortening, sugar, egg and cocoa together well.
  2. Sift the flour, and then add the sifted flour with soda and salt.
  3. Add milk and vanilla.
  4. Drop the cakes, one tablespoonful at a time, onto a baking sheet that has not been greased.
    • You could try putting parchment or wax paper on your cookie sheet. This allows the cakes to be taken off more easily.
    • The only thing that really matters about size is that they are all consistent and that they are spread far enough apart on the sheet pan.
  5. Bake at 400 degrees for 8-10 minutes.
  6. Once it has been cooked, you are ready to add the filling.

Filling

  1. Beat the shortening, butter and confectioners' sugar together until creamy.
  2. Add the marshmallow and vanilla.
  3. Mix them together until smooth.
  4. Put the filling between the flat sides of two cakes and serve.
  5. Finished.
