Make a Kani Salad
"Kani" is the Japanese term for crab, that is used in sushi. This light vegetable salad creates the perfect appetizer or lunch on a breezy day. Try this kani salad recipe.
Ingredients
- 1 medium cucumber
- 1 medium carrot
- Small head of lettuce
- 3 to 4 pieces imitation crab meat sticks
- 2 to 3 tablespoons mayonnaise, or to taste
Steps
- Wash, peel, and cut the cucumber and carrots into matchstick pieces.
- Shred the lettuce into bite sized pieces.
- Shred the crab sticks into strips.
- Toss the cucumber, carrots, and lettuce in a bowl with the mayonnaise.
- Layer the crab sticks on the top.
- Chill the mixture until ready to serve.
