Make a Swiss Roll

A Swiss roll is perfect for any occasion, a birthday, a family gathering or just for fun. It also takes hardly any time at all. It's fairly easy to make and is great for people who are just beginning to bake.

Ingredients

  • 3 eggs
  • 75g (50g) caster sugar
  • 75g (3 oz) plain flour
  • 2 tablespoons of jam
  • 2 tablespoons cocoa powder (optional)
  • 1 teaspoon of baking powder

Steps

  1. Light oven Reg 7 or 200ºC/400ºF.
  2. Grease and line a Swiss roll tin.
  3. Put eggs and caster sugar into a large mixing bowl and whisk until light and creamy (it should be very thick at this stage).
  4. Sieve flour into mixture and fold very gently using a spoon.
  5. Pour the mixture into tray carefully.
  6. Cook for 10-12 minutes until golden brown and springy to touch.
  7. While cooking place a piece of greaseproof paper on a cooling tray and sprinkle with sugar.
  8. When the sponge is cooked remove from oven, tip upside down on sugared paper and carefully remove paper from sponge.
  9. Cut off any hard crusty edges. Spread with jam(and\or)cream and roll.
  10. Leave in paper for a few minutes before serving on a plate.
  11. Finished.

Tips

  • Fold the flour into the mixture very gently scooping the mixture from the bottom and bringing it to the top
  • Spread the mixture around the tray and fill all the whole tray.
  • Grease Swiss roll tin by pouring olive oil into a cup and spreading it with a paintbrush. Do a line in the middle then put the grease proof paper on and then grease over the top of it.
  • Warm up the jam for 40 seconds in the microwave so it spreads more easily.
  • Check the quality of the eggs by putting them in the bowl before the caster sugar.
  • Try to roll your sponge tightly, unlike the Swiss Roll in the pictures.

Warnings

  • Don't let the Swiss roll burn–check on it every 3 minutes.
  • (even if it doesn't look burned from the top make sure you check the bottom of the swiss roll)
