Cook French Beef Stew

Ingredients

  • 1&1/2 pounds of stew beef, cut into 1-inch cubes
  • 1/4 cup of all purpose flour
  • 2 tablespoons of vegetable oil
  • 29 oz. diced tomatoes with garlic and onion
  • 14 oz. beef broth
  • 4 medium carrots, peeled and cut into 1-inch chunks
  • 2 medium potatoes, peeled and cut into 1-inch chunks
  • 3/4 teaspoon dried thyme, crushed
  • 2 tablespoons of Dijon mustard (optional)

Steps

  1. Gather the ingredients listed.
  2. Combine meat and flour in a large plastic food storage bag and toss to coat evenly.
  3. Brown the meat in hot oil in a 6-quart saucepan. Season with salt and pepper, if desired.
  4. Add the remaining ingredients except the mustard. Bring to a boil. Then, reduce the heat to medium-low. Cover it and simmer for an hour or until the beef is tender.
