Hand Roast Lion Peak Dragon Well Green Tea

Lion Peak Dragon Well tea, also known as Longjing tea, is considered to be a luxurious tea. It takes many hours of labor to hand roast this kind of tea, from picking it to drying to roasting. The leaves are hand roasted (more like hand pressed) into the wok so you'll be able to judge the pressure and heat needed to fully roast the tea leaves. 4lb tea leaves are roasted to 1 lb tea.

Steps

  1. Thinly spread the tea leaves over bamboo sieves in shade.
  2. Dry tea leaves in the shade. Reduce water and turn softly.
  3. Put the tea leaves in the wok.
  4. Roast tea leaves for the first round with electric wok by hand. This round should last 20 minutes, at about {{safesubst:#invoke:convert|convert}}.
  5. "Rest" the leaves in a basket for re-hydration.
  6. Roast a second time, for 20 minutes at about {{safesubst:#invoke:convert|convert}}. You'll have to press the leaves harder since the wok will be cooler.
  7. Take the leaves out and put them in a basket. They should be flat.
