Keep Peeled Potatoes Fresh

Potatoes are kind of like apples in that after you peel them, they start to react to the atmosphere by getting dark spots. Want to keep your peeled potatoes fresh and delicious for as long as possible? Follow these steps and your potatoes will look significantly better than if you just left them out in the open air.

Steps

  1. Peel your potatoes. Be careful during this process, as it can affect the aesthetic of the potatoes that you're intent upon preserving.
  2. Immerse your peeled potatoes in a pan of cold water. Make sure to cover the surface area of every single potato. This will ensure that none of the potatoes are exposed to the atmosphere.
  3. Transfer the potatoes to a container if you don't want to eat them right away. Make sure the container is also full of cold water, and keep it in your refrigerator with the lid on tight. You can store them like this for a few days, but not for more than a week, so don't forget to use them before then!
  4. Wrap your peeled potatoes in plastic wrap if you don't want to keep them in water. This method is also pretty effective, but if your plastic wrap has a hole or isn't sealed tightly enough around the edges, your potatoes can still get brown. If you are worried about your potatoes turning brown, add lemon juice to keep their natural color.
