Make Bananas in Coconut Milk

Bananas in coconut milk is a traditional way of serving bananas and coconut in many tropical areas of the world but this dessert dish is especially known in Thai cuisine. While there are many ways of making this delicious dish, here are a few takes on a delightful dessert that work well at home.

Ingredients

Bananas in coconut milk:

  • 4 large bananas
  • 375ml/ 1/2 cup coconut milk
  • 30ml/2 tablespoons coconut sugar
  • Salt, to taste

Bananas in coconut milk with lime:

  • 400ml (13.5 fl oz) can coconut milk
  • 80g/ 1/3 cup caster or superfine sugar
  • 2 teaspoons lime juice, fresh
  • 4 large bananas, ripe

Bananas in coconut milk and tapioca:

  • 6 bananas
  • 400ml (13.5 fl oz) coconut milk
  • 400ml (13.5fl oz) water
  • 3 tablespoons of tapioca pearls
  • 4 tablespoons of soft brown sugar
  • 1/2 teaspoon salt
  • 1 teaspoon of vanilla extract
  • 4 tablespoons of peanuts, roasted (you can substitute with a different nut if preferred)
  • 3 teaspoons sesame seeds

Steps

Bananas in Coconut Milk

  1. Peel the bananas. Cut them into 5cm/2 inch rounds.
  2. Pour the coconut milk into the saucepan. Heat over medium heat. Add the coconut sugar, stirring until it dissolves. Do not allow to boil.
  3. Drop the banana slices into the warm milk. Cook gently for 5 minutes. Remove from the heat.
  4. Transfer the cooked bananas and coconut milk into 4 to 5 individual bowls. Serve immediately, warm.

Bananas in Coconut Milk with Lime

  1. Peel the bananas. Slice into rounds.
  2. Pour the coconut milk, caster sugar and lime juice into the saucepan. Cook over a medium heat, stirring to dissolve the sugar.
  3. Bring the mixture to the boil. Add the banana rounds. Reduce to a simmer and cook for another 2 minutes. Stir very gently, to avoid spoiling the fruit.
  4. Transfer into six bowls. Serve warm or place in the refrigerator to chill.

Bananas in Coconut Milk and Tapioca

  1. Peel the bananas. Cut them into rounds measuring about 1/2mm thickness.
  2. Transfer the banana rounds to a bowl. Add 1 tablespoon of the soft brown sugar. Stir to coat the banana rounds. Set aside to infuse with the sugar's sweetness.
  3. Pour water into a large saucepan. The water should be three times the quantity of tapioca pearls. Add the tapioca pearls , bring to the boil and cook for 30 minutes. Keep an eye on it, stirring from time to stop the pearls from sticking to the base of the pan.
  4. Lower to a simmer. Stir constantly until the pearls turn translucent, about 10 minutes later.
  5. Remove from the heat. Pour cold water over the tapioca pearls, draining quickly. Transfer to a bowl. Set aside.
  6. Pour the coconut milk and 400ml (13.5 fl oz) of water into the saucepan. Bring to the boil,then reduce to a simmer. Add the banana slices and stir gently to avoid damaging the fruit.
  7. Pour in the rest of the sugar, the vanilla extract and salt to taste (from a pinch up to 1/2 a teaspoon). Finish by pouring in the cooked tapioca. Stir gently.
  8. Cook the dish for 10 minutes over a low heat. Remove it from the heat. Allow to cool a little. If you wish, you can chill it instead of serving it warm. If serving cold, add to the refrigerator until the next steps are done.
  9. Dry fry the sesame seeds in a frying pan. Dry fry for a few minutes until they turn a golden colour. Set aside in a bowl.
  10. Break the peanuts. Place the peanuts into a plastic bag. Use a rolling pin to break them down a little; there should still be large pieces.
  11. Transfer the bananas and coconut milk into 6 bowls. Sprinkle the broken peanuts and dry fried sesame seeds over the the top.
  12. Serve. Depending on your preference, it can be served warm or cold.
