Make Barbecued Chicken Kebabs

This is a great, creative treat. It's easy to make and delicious to eat!

Serves 4

Ingredients

  • 600g (1 1/4 lb) boneless and skinless chicken meat, cubed into bite sized pieces
  • Juice of 1/2 lemon
  • 1 teaspoon olive or other polyunsaturated oil
  • 1/2 teaspoon oregano
  • 1/2 small clove garlic, finely chopped
  • A little freshly ground black pepper
  • 1 green capsicum, halved, de-seeded, cut into small pieces
  • 1 medium onion, cut into small pieces
  • 16 cherry tomatoes or 4 large ones, quartered

Steps

  1. Soak bamboo sticks in water for at least 30 minutes before preparing the kebabs. This prevents the wood from burning.
  2. Toss chicken with lemon juice, oil, oregano, garlic and pepper.
  3. Thread the ingredients onto the sticks. Start with a piece of chicken and alternate with a vegetable (including the tomatoes). Be sure to end the stick with a piece of chicken. Refrigerate if not using immediately.
  4. Place kebabs on a very clean, hot barbecue or under the grill and cook for about 5 minutes on each side.
  5. Finished.

Tips

  • Serve these kebabs with rice or a mixed salad.
