Make Barbecued Chicken Kebabs
This is a great, creative treat. It's easy to make and delicious to eat!

Ingredients
- 600g (1 1/4 lb) boneless and skinless chicken meat, cubed into bite sized pieces
- Juice of 1/2 lemon
- 1 teaspoon olive or other polyunsaturated oil
- 1/2 teaspoon oregano
- 1/2 small clove garlic, finely chopped
- A little freshly ground black pepper
- 1 green capsicum, halved, de-seeded, cut into small pieces
- 1 medium onion, cut into small pieces
- 16 cherry tomatoes or 4 large ones, quartered
Steps
- Soak bamboo sticks in water for at least 30 minutes before preparing the kebabs. This prevents the wood from burning.
- Toss chicken with lemon juice, oil, oregano, garlic and pepper.
- Thread the ingredients onto the sticks. Start with a piece of chicken and alternate with a vegetable (including the tomatoes). Be sure to end the stick with a piece of chicken. Refrigerate if not using immediately.
- Place kebabs on a very clean, hot barbecue or under the grill and cook for about 5 minutes on each side.
- Finished.
Tips
- Serve these kebabs with rice or a mixed salad.
