Make Fried or Baked Bannock
A simple recipe where you can substitute ingredients to create your own signature style. This tastes great with Hamburgers or Tomato Soup.

Ingredients
- 4 cups flour
- 6 tsp sugar
- 2 tsp salt
- 8 tsp baking powder
- 1/2 cup lard, oil or pork/bacon drippings (baked bannock only)
- 4 cups lukewarm water
(optional - use equal parts hot water and cold milk)
Steps
Baked Bannock
- Place dry ingredients in a bowl. Mix well. If you are using lard, mix it in now.
- Stir in water and oil.
- Mix dough until it is hard enough to knead into a ball. Let dough stand for 10 min. before you roll out on cookie sheet.
- Poke holes in the dough with a fork when it is big enough to fit on a cookie sheet and 1/2 inch (1.25cm) thick.
- Bake for 45 minutes in a 400 degree oven.
Fried Bannock
- Place dry ingredients in a bowl. Mix well.
- Stir in water.
- Mix dough until it is hard enough to knead.
- Roll dough out to a bit less than 1/2 inch (1.25cm) thick.
- In a large frying pan heat oil (medium heat or lower)until a drop of water sizzles if dropped in it. Make sure the oil is deep enough so that the dough floats.
- Cut the rolled dough with a large glass.
- Prick the cut dough with a fork or cut slits in it to fry it thoroughly.
- Turn dough over until both sides are brown. Depending on the heat of the oil, this should take a minute or two per side.
- Finished.
Tips
- Add an egg or two to make the dough softer, or raisins for raisin bannock.
- You may also cut the dough into any shape you wish for either methods.
- Substitute yeast for baking powder and let rise as directed.
- Substitute milk, buttermilk, or broth for the water for more flavor.
- Check the bottom every now and again so that it doesn't over bake.
- If you are halving the recipe, 2 cups of water is too much so only add one, or add extra flour. This recipe is pretty flexible to experiment with.
Warnings
- For Fried Bannock, dust off the flour before frying or the flour will burn at the bottom of the frying pan.
- Be sure to have your dough cut and ready because frying doesn't take very long.
