Make Green Eggs and Ham

You've heard of the famous dish and now you can make it yourself! There are a few ways to accomplish this and detailed below we have two. This meal is perfect for serving and ideal for parties -- everyone will want to try it...even if it doesn't taste that good.

Ingredients

Method 1: With Food Coloring & Scrambled

  • 4 eggs
  • Kosher salt and freshly ground black pepper
  • 2 to 3 drops blue food coloring
  • 1/4 cup (about 8-ounces) minced ham

Method 2: With Cabbage Juice & Fried

  • 2 eggs
  • 1 head of purple cabbage
  • 1 or 2 slices of breakfast ham

Steps

With Food Coloring & Scrambled

  1. Break the eggs into a medium-sized bowl by lightly tapping the egg against the counter. Push gently into the crack with your thumbs and pull the 2 sides of the shell apart. Throw out the shells.
  2. Add a pinch of salt and a pinch of pepper and 2 to 3 drops of blue food coloring to the eggs to make the desired green color. Whisk the eggs until they are completely mixed together.
    • Remember how blue and yellow make green? That's why.
  3. Heat a nonstick skillet over medium-low heat. Add the ham and cook it until it begins to brown a little, about 3 minutes. Stir it with the wooden spoon to keep it from sticking.
  4. Pour the eggs right on top of the ham. Don't stir until the eggs have begun to set, about 2 minutes. Use a spatula to fold the cooked eggs over as they cook. Chop up the eggs with the tip of the spatula.
  5. Remove the eggs to small plates as soon as they are done and serve with toast or other breakfast fare.

With Cabbage Juice & Fried

  1. Grab the cabbage and wring the juice out of it. You can do this by either nuking it in the microwave and squeezing out its juice through a coffee filter or putting the chopped pieces in boiling water until it leaks its color. You should now have a delicious cup of purple juice.
    • Cabbage leaves contain anthocyanin. This is a pigment that scientists believe acts, in a living plant, as a kind of sunscreen, warding off the high-energy blue and green light to shield the plant from damage.
  2. Grab 2 eggs, crack 'em, and separate out the yolks. Plunk them down somewhere safe. You'll need it whole, later.
  3. Mix a little cabbage juice into the egg whites. Watch the color change from purple to a yellowish green! Pour the whites (now green) in a pan, plop the unbroken yolks down on top of it, and fry them up.
  4. Brown your breakfast ham over high heat for a couple of minutes. Place a teeny bit of oil in a pan and, when the edges start browning, 3 or so minutes later, you're done.
  5. Combine as beautifully as you can. You could put it in a box, or on a fox, or in socks. Keep in mind, it probably won't taste that good. You may want to close your eyes.
    • Or in a tree, near a bee, in the sea...



Tips

  • If you need to, put more drops of food coloring in the eggs when cooking; this will make it more green. But DO NOT empty a large content of the coloring; this will not only give it a sickly green color, but will give it a horrible taste and will rotten it quickly.
