Make Mascarpone Frosting
A soft, creamy cheese often used in tiramisu, mascarpone is also a deliciously indulgent ingredient to make frosting from. This recipe provides enough frosting for one large cake to be frosted on the outside and a middle layer.
Ingredients
- 250g cream cheese, softened
- 1 cup/160g confectioners sugar (icing sugar), sifted
- 1 teaspoon vanilla extract
- 250g mascarpone cheese
- 1 14 cups/300ml thickened cream
- Large cake cut in half, to frost or a few cupcakes
Steps
- Place the cream cheese, sugar and vanilla into a mixing bowl. Using the electric hand mixer, beat together until smooth.
- Add the mascarpone cheese. Beat in using medium speed, until just combined.
- Add the cream last. Beat in until the mixture is smooth.
- Spread the frosting over a cake as well as on the inner middle layer. If you are making cupcakes - frost the top of the cakes.
- Decorate with extra garnishes. While the frosting is enough on its own, you might like to add other toppings to the frosting, such as:
- Chocolate sprinkles or grated/shredded chocolate
- Chocolate curls
- Shredded coconut or toasted coconut flakes
- Dusted cocoa powder
- Chopped or flaked nuts
- Rock candy crystals, etc.
- Finished.
