Make Peanut Butter Cookies

Ingredients
- 1 cup all-purpose flour
- ½ teaspoon baking powder
- ¼ teaspoon baking soda
- 2 tablespoons vegetable oil
- ⅓ cup creamy peanut butter (more if desired)
- ½ cup of butter, softened (8 tablespoons)
- ⅓ cup granulated white sugar
- 1 large egg
- 1 teaspoon pure vanilla extract
Steps
Setting Up
- Preheat your oven to 350ºF (180ºC). Grease cookie sheets or line them with parchment paper.
Preparing the Batter
- Combine the flour, baking powder, baking soda, and salt in a bowl. Mix then set aside.
- Mix the oil, smooth peanut butter, softened butter, and sugar. Stir until they're well blended.
- Add the egg and vanilla extract to the oil mixture. Mix it well.
- Gently fold in the flour mixture into the wet batter until it's just combined.
- Let dough rest for about 5 minutes.
Making the Cookies
- Roll the dough into generous 1" (2.5cm) balls.
- Place each ball onto the prepared cookie sheets. Space them about 2" (5cm) apart.
- Form a crosshatch pattern using the tines of a fork. Press each ball down gently into a 1 1/2" (3.5cm) round.
- If your fork begins to stick in the dough, dip it lightly into flour and resume making the crosshatching pattern.
Baking the Cookies
- Bake the cookies for about 10 minutes or until their edges are just lightly brown.
- Remove the cookies from the oven. Let them stand on the cookie sheets for a couple of minutes before transferring them to wire racks to cool.
- Serve the cookies warm or at room temperature. If keeping longer, store in an airtight container once cooled down.
Tips
- For even browning, rotate the cookie sheet halfway through baking. Positioning the sheet in the center of the oven works well.
- If you are making cookies for/with children, try experimenting with the dough shapes to see which one the little ones love the most.
- If you prefer a smoother surface, flatten the peanut butter cookie balls with the bottom of a spatula or drinking glass.
- If you want a really nutty taste, you can use more peanut butter, up to 1 cup.
- Bake one sheet at a time to allow enough space for heat to circulate through the cookies.
Warnings
- Wear oven mitts when handling the hot cookie sheet.
- When flattening the cookies, do not flatten them too thin. They burn easily and the middle does not cook well.
