Make Pressure Cooker "Fried" Chicken
Not truly fried in the truest sense, the following recipe makes a quick and tasty "fried" chicken dinner.

- Chicken pieces
- Flour
- Salt and pepper
- Vegetable oil
Steps
- Important: Read your pressure cooker manual before cooking this recipe.
- Combine flour, salt and pepper in a zipper-style food storage bag.
- Cut up chicken, if needed.
- Toss chicken pieces in seasoned flour mixture.
- Heat a small amount of vegetable oil in the frying pan
- Brown chicken pieces.
- Remove browned chicken pieces to a plate.
- Drain off excess fat.
- Add water. See tips below for more information.
- Place pressure cooker trivet in pan.
- Add chicken pieces.
- Secure pressure cooker lid onto pot.
- Engage the pressure regulator following the manual's directions.
- Quickly bring up to 15 pounds pressure.
- Reduce heat to the point where the pressure cooker regulator is either rocking or the regulator is in the correct position showing pressurization.
- Preheat broiler.
- Line a jelly roll baking pan with foil.
- Spray baking pan with nonstick cooking spray.
- Cook chicken 12 to 15 minutes in pressure cooker. See tips below for more information.
- Let the chicken cool naturally for 5 minutes.
- Release pressure, if required.
- Carefully remove pressure cooker lid.
- Remove chicken pieces to prepared baking pan.
- Broil until crispy.
- Finished.
Tips
- Quickly bring the food up to pressurization then lower the heat to the lowest amount possible while maintaining pressurization.
- Different pressure cookers have different types pressure rockers or buttons. Check your manual to see how your pressure cooker operates. The Fagor pressure cooker has a button that will fully extend when under pressure.
- Cook times vary by pressure cooker and elevation. Read your pressure cooker manual for more information. The following recipe is based on an approximate 2,300 elevation using a Fagor pressure cooker set at 15 pounds pressure. Your pressure cooker may have different requirements.
- Read your pressure cooker manual for the correct water amount. Each pressure cooker has a minimum amount of water required to cook correctly.
Warnings
- Always use care when opening the pressure cooker. The food is very hot.
- Always allow pressure cooker food to cool a bit before tasting. The pressure cooker reaches high temperatures while cooking.
- Do not attempt to pressure cook chicken using only oil. This is very dangerous and not recommended. It is okay to brown the chicken in oil and later cook the chicken under pressure using water.
- Always follow your pressure cooker's manual for directions.
- Always make sure your pressure cooker vent or valve systems are clear. Check your manual for guidance.
