Make Ras El Hanout Spice Blend
This is a Moroccan spice blend that translates as "the best quality". Use in dishes inspired by Moroccan flavours.
Ingredients
- 2 tsp coriander seeds
- 1 1/2 tsp cumin seeds
- 1/2 tsp cardamom seeds
- 1/2 tsp fennel seeds
- 1/2 tsp black peppercorns
- 1/2 tsp allspice
- 1 tsp ground turmeric
- 1 tsp ground cinnamon
- 1/2 tsp paprika
Steps
- Dry fry the seeds and peppercorns in a heavy-based frying pan for one minute.
- Pour the seeds and peppercorns into a mortar and pestle or processor for grinding.
- Add the remaining spices.
- Grind or process the seeds and spices until smooth.
Tips
- Store this mixture in an airtight container.
- This mixture will keep for one month.
