Make Starbucks Lemon Loaf

You might have a special place in your heart for the delicious pastries at Starbucks, but you don't have to go there to enjoy this one.

Ingredients

For the Loaf:

  • 1½ cups plain flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon sea salt
  • 3 eggs
  • 1 cup granulated sugar
  • 2 tablespoons unsalted butter
  • 1 teaspoon pure vanilla extract
  • 2 teaspoons lemon extract
  • ⅓ cup lemon juice
  • ½ cup olive oil
  • Lemon zest from 1 lemon

For the Glaze:

  • 1 cup powdered sugar
  • 2 tablespoons whole milk
  • ½ teaspoon lemon extract

Steps

  1. Preheat oven to 350 degrees. While oven is heating, grease and flour a loaf pan.
  2. Mix flour, baking soda, baking powder and salt in a large mixing bowl. Use a wire whisk to mix together.
  3. Combine eggs, sugar, butter, vanilla extract, lemon extract and lemon juice in a mixing bowl. Consider using an electric mixer to make the process easier.
  4. Pour dry ingredients into wet ingredient bowl and combine. For best results add dry ingredients slowly and in increments so the dry ingredients don't spill from the bowl.
  5. Add oil and lemon zest and continue to mix well.
  6. Pour mixture into the pre-greased loaf pan and place in oven.
  7. Bake for 45 minutes and test loaf pan for doneness using a toothpick. If the toothpick comes out clean the loaf is ready to be removed from the oven.
  8. Make loaf cake glaze. Whisk powdered sugar, milk and lemon extract together in a bowl.
  9. Drizzle glaze over cooling loaf and allow to cool completely on a wire rack.

Tips

  • Bring eggs to room temperature before adding to mixture. Cold eggs may compromise the levity of the loaf.
  • Measure baking soda and powder carefully. Too much of either can collapse the loaf in the oven.
  • Allow loaf to cool completely before removing from loaf pan (to avoid collapse).
  • Add more lemon zest to the glaze for an extra lemon flavor.
