Make Stuffed Jalapenos
Imagine. You have just been invited to a picnic and, of course, you have to bring something to eat. Stuffed jalapenos are a perfect option since they take 1 hour until they are ready to be consumed!

Ingredients
Cream cheese and bacon stuffed jalapeños:
- 12 fresh jalapeno peppers, halved lengthwise and seeded
- 1 (8 ounce) package whipped cream cheese
- 12 slices bacon, cut in half
Shrimp and cheese stuffed jalapeños:
- 24 large jalapeno peppers, the larger the better
- 48 large shrimp
- 10oz cheddar or any other cheese
- 4 oz cream cheese
- Salt and pepper to taste
- 1/4 teaspoon cumin
- 1/4 teaspoon garlic powder
- 48 small pieces of bacon or prosciutto for wrapping the jalapeno halves
Steps
Cream cheese and bacon stuffed jalapeños
- Preheat oven to 400 degrees.
- Cut the jalapenos in half.
- Stuff each jalapeño half with whipped cream cheese.
- Wrap a half slice of bacon around each stuffed jalapeño half.
- Place the wrapped jalapeño halves in one layer on a medium baking sheet.
- Bake the peppers in the preheated oven for 45 minutes or until the bacon is evenly browned and crisp.
- Finished.
Shrimp and cheese stuffed jalapeños
- Parboil the peppers. Do this for 10 to 15 minutes. Remove from the water and set aside.
- Peel the shrimp. Chop into {{safesubst:#invoke:convert|convert}} pieces.
- Grate the cheese.
- Mix the cream cheese, grated cheese and shrimp together.
- Add seasonings. Add salt and pepper to taste, and the garlic powder and cumin.
- Cut the peppers lengthwise. Scoop out the middle seeds and the membranes.
- Wear gloves when doing this and do not rub your eyes or nose while handling the peppers.
- Stuff the cheese mixture inside the halved peppers. Wrap with either bacon or prosciutto.
- Place on a baking sheet. Bake at a moderate temperature for 25 minutes, until the outside wrap turns crispy.
- Serve straight from the oven.
Tips
- This recipe should make about 24 stuffed jalapeños, enough for about 4-7 people. You may wish to divide the ingredients by 2 if you are making the peppers for just yourself, or a smaller group of people.
- Instead of using an oven, you could try grilling the jalapeños.
- After wrapping the bacon around the pepper, put a toothpick through it to help keep it from falling off.
- Remove the seeds and veins if you prefer it to be less spicy.
- Add an equal amount of manchego, Queso asadero or Queso Oaxaca (Monterey Jack can be used if you can't find them)to the cream cheese as well as a dash of smoked paprika.
- Try mixing the Cream Cheese with chopped sun dried tomatoes for a great flavor and texture.
Warnings
- And don't handle jalapeños with your bare hands, the capsaicin can burn your hands for hours.
- Be sure to allow the peppers at least 5-10 minutes to cool so you don't burn yourself.
