Make a Cheesy Gordita Crunch

Would you like to make a delicious cheesy gordita crunch at home just like the one that you have been enjoying at Taco Bell? Satisfy your hunger with the following simple procedure on how to make a cheesy gordita crunch; this quick and easy Tex-Mex recipe can be made within 20 minutes.

This recipe makes enough for 2 servings.

Ingredients

  • 2 soft gordita tortillas (NOT soft-taco shells as pictured, buy either Gordita Shells or Pita Shells)
  • 2 hard taco shells
  • 2/3 cup of shredded mozzarella cheese
  • 1 tablespoon of vegetable oil
  • ½ cup Mexican salsa
  • ½ cup sour cream

4-8oz Ground Beef (depending on how much beef you want in each) 1 packet - Taco-Meat Seasoning

  • ¼ cup shredded lettuce
  • ¼ cup of diced green peppers
  • ¼ cup of diced jalapeño
  • ¼ cup of diced green onions
  • ¼ cup of diced tomatoes

BAJA SAUCE (Recipe's author didn't even include a sauce, here's one that is reportedly quite good: Taco Bell Baja Sauce Clone

1/4 of a red bell pepper, seeded and coarsely chopped 1 large jalapeno, chopped in half 2 tablespoons diced Spanish onions 1 cup mayonnaise 1 tablespoon vinegar 1/4 teaspoon black pepper 1 dash garlic powder 1 dash cumin Using a food processor, puree peppers and onion. Mix 1 cup mayo and 4 teaspoons of the vegetable puree in a bowl. Add remaining ingredients and mix well. Chill for several hours to blend flavors.

Steps

  1. Wash the vegetables with warm water. Dice or shred as required (see "Ingredients" list).
  2. Warm a pan on medium heat and add vegetable oil.
  3. Add the beans to the pan. Stir for 5 minutes over low to medium heat.
  4. Prepare the gordita tortillas.
    • Sprinkle 1/8 cup of cheese on each tortilla.
    • Warm the tortilla in microwave for 30 seconds on standard settings or until the cheese is melted.
  5. Prepare the filling. Place a taco shell in the middle of the tortilla. Gently press each side until the melted cheese causes the sides of the heated tortillas to stick to the taco shells.
    • Place beans inside the taco shell.
    • Add lettuce, tomatoes, green onions, green peppers, jalapeños, sour cream, salsa, and cheese according to your preference.
  6. Enjoy a delicious cheesy gordita crunch meal.

Tips

  • When applying the soft shell taco, make sure all of the cheese is melted for maximum adherence.
  • Do not heat the beans too early or they will get cold.
  • If a plain soft tortilla seems a little boring try roti, naan, or puri (fried Indian flatbreads) or, if available, Navajo fry bread for a little more substance.
