Make Tarragon Vinegar

Tarragon vinegar is such a useful vinegar to have on hand that knowing how to make your own is definitely worth it. It goes well in salad dressings and even as a dressing in its own right. And it is a frequent accompaniment to French recipes. Be sure to use the French tarragon, not the Russian version.

Ingredients

  • 2 cups of French tarragon leaves, fresh and loosely packed
  • 2 cups vinegar
  • Additional sprig tarragon for decoration

Steps

  1. Bruise the tarragon leaves lightly to release the flavour.
  2. Pack the leaves into a container.
  3. Pour the vinegar over the leaves in the container.
  4. Cover the container and leave for 2—3 weeks. This will draw out the flavour of the tarragon into the vinegar.
  5. Pour the strained vinegar into bottles. Add the sprig of tarragon (one for each bottle) before pouring in the vinegar.
  6. Screw on the lid. Label and date.
  7. Finished.

Tips

  • Use within 6 months of making.
