Make Vegan Pepperoni

Don't think being vegan means you can't enjoy a delicious slice of pepperoni pizza. Pepperoni can be prepared using wheat gluten combined with seasonings for a spicy, delicious flavor that is 100% vegan.

Servings: 1 pepperoni

Ingredients

Dry ingredients

  • 1 1/4 cups wheat gluten
  • 1/4 cup nutritional yeast
  • 3/4 tsp salt
  • 3 tsp paprika
  • 1 tsp black pepper
  • 1/2 tsp red pepper flakes
  • 3/4 tsp mustard seed
  • 1 tsp fennel seed
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • Flour for the kneading surface

Wet ingredients

  • 2 tbsp cashew butter
  • 2/3 cup water
  • 4 tbsp ketchup (tomato sauce)
  • 1 tsp barbecue sauce
  • 1/4 tsp agave nectar

Steps

  1. Preheat the oven to 325ºF/170ºC and set aside a roll of kitchen foil for later use.
  2. Prepare all of the necessary ingredients.
  3. In a large bowl, mix the dry ingredients together.
  4. Mix together the cashew butter gradually with the water in a small bowl.
  5. Combine the other wet ingredients into the small bowl.
  6. Add the wet ingredients to the dry ingredients until they form a ball.
  7. Remove the dough from the bowl and knead it for 2 minutes on a well-floured cutting board.
  8. Roll the dough into a 7"-long (17.5cm) log.
  9. Wrap the log in kitchen foil, twisting the ends of the foil into a "tootsie-roll" shape.
  10. Bake the log for 1 hour 15 minutes. Turn the log over after 45 minutes.
  11. Remove the pepperoni from the oven and allow it to cool, unwrapped, on a cooling rack.
  12. Refrigerate for at least a couple of hours before unwrapping and slicing.
  13. Plate and serve.

Tips

  • Peanut butter or tahini are suitable substitutes for cashew butter.
  • The pepperoni can be wrapped in aluminum foil and stored in the refrigerator for up to 10 days.
