Make Vegan Pepperoni
Don't think being vegan means you can't enjoy a delicious slice of pepperoni pizza. Pepperoni can be prepared using wheat gluten combined with seasonings for a spicy, delicious flavor that is 100% vegan.

Ingredients
Dry ingredients
- 1 1/4 cups wheat gluten
- 1/4 cup nutritional yeast
- 3/4 tsp salt
- 3 tsp paprika
- 1 tsp black pepper
- 1/2 tsp red pepper flakes
- 3/4 tsp mustard seed
- 1 tsp fennel seed
- 1/2 tsp garlic powder
- 1/4 tsp onion powder
- Flour for the kneading surface
Wet ingredients
- 2 tbsp cashew butter
- 2/3 cup water
- 4 tbsp ketchup (tomato sauce)
- 1 tsp barbecue sauce
- 1/4 tsp agave nectar
Steps
- Preheat the oven to 325ºF/170ºC and set aside a roll of kitchen foil for later use.
- Prepare all of the necessary ingredients.
- In a large bowl, mix the dry ingredients together.
- Mix together the cashew butter gradually with the water in a small bowl.
- Combine the other wet ingredients into the small bowl.
- Add the wet ingredients to the dry ingredients until they form a ball.
- Remove the dough from the bowl and knead it for 2 minutes on a well-floured cutting board.
- Roll the dough into a 7"-long (17.5cm) log.
- Wrap the log in kitchen foil, twisting the ends of the foil into a "tootsie-roll" shape.
- Bake the log for 1 hour 15 minutes. Turn the log over after 45 minutes.
- Remove the pepperoni from the oven and allow it to cool, unwrapped, on a cooling rack.
- Refrigerate for at least a couple of hours before unwrapping and slicing.
- Plate and serve.
Tips
- Peanut butter or tahini are suitable substitutes for cashew butter.
- The pepperoni can be wrapped in aluminum foil and stored in the refrigerator for up to 10 days.
