Make a Canadian Flag Cake

Celebrate Canada Day in style by making a trifle that resembles the Canadian flag. This cake is simple to prepare and it looks absolutely fantastic.

Serves: 12

Ingredients

  • 1 pkg. (298 g) pound cake, cut into 10 slices
  • 2 cups boiling water
  • 2 packages (85 g each) Jell-O strawberry jelly powder
  • 3 cups ice cubes
  • 3 cups sliced fresh strawberries, halved
  • 2 cups thawed Cool Whip™ whipped topping

Steps

  1. Line the base of a 13 x 9-inch pan with the ten cake slices. Set aside.
  2. Stir the boiling water into the combined dry jelly powders in a large bowl. Stir for at least 2 minutes until the jelly powder is completely dissolved.
  3. Add the ice cubes to the jelly liquid. Stir through for 3 to 5 minutes, or until thickened. Remove any remaining ice.
  4. Stir in 1 cup of strawberries. Spoon the jelly and strawberry mixture over the cake slices. Refrigerate the cake for 15 minutes.
  5. Remove from the refrigerator. Spread the cake evenly with the whipped topping.
  6. Refrigerate for 4 hours or until jelly is firm.
  7. Decorate.
    • Use a toothpick or skewer to trace the lines and maple leaf pattern of the the Canadian flag.
    • Place a strawberry slice on each leaf point, then fill in the maple leaf and flag edges with remaining strawberries.

  8. Store in refrigerator until needed. This should be consumed the same day that the topping is added.

Quick-set frozen strawberry variation

This variation relies on using frozen sliced strawberries.

  1. Dissolve the jelly powders in boiling water as directed above.
  2. Stir in 1 cup each frozen strawberries and ice cubes.
  3. Stir 3 to 5 minutes, or until thickened. Remove any remaining ice.
  4. Continue as directed above, decorating with 2 cups sliced fresh strawberries.



Tips

  • Do not leave cake out more than two hours during serving; return to fridge if the weather is hot.
