Pie Crust
- 16 oreo cookies, broken
- 2 tbsp unsalted butter, melted
Pie Filling
- 3 packages (8 oz. each) cream cheese, softened
- 1 cup sugar
- 3 tablespoons all-purpose flour
- 1 teaspoon pumpkin pie spice
- 1 cup canned pumpkin
- 4 eggs
- 1-1/2 cups semisweet chocolate chips
Steps
Preparing the Pie Crust
- Preheat the oven to {{safesubst:#invoke:convert|convert}}.
- Place broken cookies in a food processor and blend until cookies are crumbs. Transfer crumbs to medium-sized bowl, add in the butter, and mix with fingers until well combined.
- Pour crumbs into 9-inch pie plate. Press crumbs evenly up the sides and bottom of the plate. Refrigerate for 20 minutes to firm crumbs, Bake for 10 minutes or until crumbs are set. Cool slightly.
Making the Pie Filling
- Increase the oven temperature to {{safesubst:#invoke:convert|convert}}.
- Beat cream cheese, sugar, flour and pumpkin pie spice in large bowl until well blended. Add pumpkin and eggs; beat this until well blended. Stir in small chocolate chips, then pour batter into prepared crust. Bake 10 minutes.
- Reduce oven temperature to {{safesubst:#invoke:convert|convert}}; continue baking 60 minutes or until almost set. Remove from oven to wire rack. With knife, loosen cake from side of pan. Cool completely; remove side of pan. Refrigerate about 5 hours before serving.
