Make a Fast and Easy Microwave Chocolate Cake

We all have those days when we must eat chocolate cake that is made quickly. Learn how to make three versions of decadent chocolate cake in your very own microwave oven!

Ingredients

Basic Chocolate Mug Cake

  • 1 large mug
  • 4 tablespoons all-purpose flour
  • 4 tablespoons sugar
  • 1 tablespoon unsweetened cocoa
  • 2 tablespoons whisked egg (an entire egg is too much for this amount of cake)
  • 3 tablespoons milk
  • 3 tablespoons oil
  • 3 tablespoons chocolate chips
  • Splash of vanilla

Quick Chocolate Peanut Butter Cake

  • 1 large mug, lightly greased
  • 1 egg
  • 1 tablespoon brown sugar
  • 2 tablespoons peanut butter
  • 1 tablespoon flour
  • 1 tablespoon cocoa
  • 1/4 teaspoon baking powder
  • Handful of chocolate chips

Moist Chocolate Cake with Marshmallows

  • 8" square or round microwave-safe glass baking dish
  • 1/2 cup flour
  • 1/2 teaspoon baking powder
  • 1/4 cup butter at room temperature, plus 2 tablespoons
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup chocolate syrup
  • 1 cup mini marshmallows
  • 2 tablespoons evaporated milk
  • 1/4 cup chocolate chips

Steps

Basic Chocolate Mug Cake

  1. Add flour, sugar, and cocoa to the mug and mix.
  2. Stir in the egg. The batter may be pasty at this point.
  3. Slowly stir in the milk and oil. After incorporated, add in the chocolate chips and vanilla.
  4. Place the mug in the microwave and cook for 3 minutes in a 1000 watt oven, 4 minutes in a 700 watt oven. The cake may begin to rise above the edge of the mug, but will shrink down once cooled.
  5. Carefully remove the cake from microwave as it will be hot. Let it stand for a few minutes to cool (though this might prove challenging).
  6. Experiment! For a more fudgy cake, omit the egg. Pudding mix may be substituted for unsweetened cocoa. Baking times may vary slightly due to variations in microwave ovens.

Quick Chocolate Peanut Butter Cake

  1. In a small bowl, stir egg, brown sugar, peanut butter, flour, cocoa powder, and baking powder until well incorporated.
  2. Add in chocolate chips and stir.
  3. Pour batter into a lightly greased mug. Microwave for 1 minute.
  4. Eat straight out of the mug or invert on a plate.

Moist Chocolate Cake with Marshmallows

  1. Sift flour and baking powder.
  2. Cream 1/4 cup of butter and 1/2 cup of sugar. Add eggs in one at a time and beat until fluffy.
  3. Slowly add in dry sifted ingredients. Add in 1/2 teaspoon of vanilla and chocolate syrup and beat until completely incorporated.
  4. Pour into a glass baking dish. Cook, uncovered, for 7 minutes in microwave oven.
  5. Remove cake from oven and place on a wire rack to cool. Use caution as the cake will be very hot.
  6. While cake is cooling, spread mini marshmallows over the top of the cake.
  7. In the microwave, melt 2 tablespoons of butter in a glass mixing bowl.
  8. Stir in 1/2 cup of sugar and the evaporated milk. Cook, uncovered, for an additional 2 minutes.
  9. Remove the bowl from the microwave and quickly stir in the chocolate chips and 1/2 teaspoon of vanilla. Pour over the cake and serve warm.

Tips

  • Add whipped cream or vanilla ice cream to any of these cakes for added sweetness.
  • Baking times will vary in all recipes due to variations in microwave ovens.
  • Applesauce can be substituted for oil, almond milk for milk, and sugar substitutes for sugar.
