Giant Vegan Cookie
- 2 teaspoon milled flax seed + 2 tablespoons water
- ¼ cup gluten-free quick oats, ground
- ½ tablespoons coconut flour
- ⅛ teaspoon baking soda
- ⅛ teaspoon salt
- 2 tablespoons natural nut or seed butter
- 2 tablespoons coconut sugar or brown sugar
- 1 tablespoon coconut oil, softened
- ¼ teaspoon vanilla extract
- 1 heaping tablespoon dairy-free semi-sweet chocolate chips
Steps
Giant Chocolate Chip Cookie
- Preheat the oven to 375 degrees Fahrenheit (190 degrees Celsius).
- Grease a 14 inch round pizza pan.
- Cream the butter, brown sugar, granulated sugar, and vanilla until light and fluffy. Beat for about 2 minutes.
- Crack in the eggs and blend until fully combined.
- Stir in the dry ingredients. Pour in the flour, baking soda, and salt. Blend slowly until properly combined.
- Fold in the chocolate chips and mix well.
- Flatten and spread the cookie dough on the pizza pan.
- Bake the cookie in the oven for about 20-25 minutes.
- Allow the cookie to cool for about 10 minutes.
- Serve. Slice the cookie into pieces. Top with vanilla ice cream, if desired. Enjoy!

Giant Vegan Cookie
- Preheat the oven to 350 degrees Fahrenheit (180 degrees Celsius).
- Grease a cookie sheet with non-stick cooking spray.
- Stir the flax seed and water together in a small bowl. Allow it to sit until the gel forms, taking about 5 minutes.
- Grind the oats, coconut flour, baking soda, and salt. Grind them together in a blender until well-combined.
- In a medium-sized bowl, blend the seed or nut butter with the coconut sugar and coconut oil. Mix on low speed using an electric mixer.
- Stir in the flax mixture and vanilla into the blended coconut mixture. Whisk until properly combined.
- Fold in the dry ingredients mixture and add the chocolate chips. Blend well until fully mixed.
- Flatten and spread the cookie dough on the cookie sheet.
- Bake the cookie in the oven for about 12-15 minutes.
- Allow the cookie to cool for about 10 minutes.
- Serve. Slice the cookie into pieces. Top with extra chocolate chips, if desired. Enjoy!
Tips
- Consider adding a cup of walnuts into the cookie dough mixture if desired for a crunchier taste.
- The center of the giant cookie might be slightly raw after being baked. This is normal and once it's cooled the cookie will start to firm up.
- Feel free to vary the giant cookie recipe by adding some twists such as adding raisins, using different types of chocolate chips, etc.
- For the vegan cookie, you can replace the flax seed with chia seeds.
