Here is a fresh and juicy tropical breakfast layout, with some recipes included. A tropical breakfast is the best way to start a hot summer's day, or to pretend it is summer. Be sure to include festive, tropical-coloured items to raise the level of morning cheer.

Ingredients

Fried plantain:

  • 1 plantain (yellow or black recommended for sweetness)
  • 50g (1.75oz) butter
  • 1 1/2 tbsp sugar
  • 1 tbsp ginger, finely chopped

Tropical muesli:

  • 800g (1.75lb) natural yogurt
  • 400g (14oz) muesli
  • 4 tbsp dried fruit
  • 100g (3.5oz) honey

Steps

  1. Fry the plantain.
    • Cut off both ends of the plantain. Hold it lengthwise and cut along the top.
    • Where you have cut along it, use your fingers to get under the skin and peel it off.
    • Cut it into half lengthwise, then quarter it and finally into bite size pieces.
  2. Melt half of the butter in a frying pan. Add the chopped plantain. Shake the pan regularly to evenly cook it. Add the remaining butter as needed.
  3. Add ginger and sugar. After 5 minutes, when the pieces are lightly browned, add the ginger and sugar. Shake the pan to evenly coat the plantain and cook for a further minute. Remove from the heat and place on a serving plate.
  4. Prepare the muesli arrangement. Pour the muesli on top of the yogurt and add the dried fruit cocktail. Pour the honey over the whole dish. You can also garnish with a sprig of mint.
  5. Prepare the fresh fruit juice. A delicious fresh watermelon juice is perfect for the tropical experience.
  6. Buy tropical fruits. Tropical fruits are essential for this breakfast. Choose what is available from your local shops and be sure to experiment with a new fruit or two that you have never tried. Look for guava, papaya, mango, pineapple, and passion fruit.
  7. Serve. Fresh fruits, fried plantain, tropical muesli and watermelon juice served together make a delicious tropical breakfast.
  8. Finished. Enjoy your tropical breakfast.

Tips

  • Use bright colours for the table, including the tablecloth. Small paper umbrellas add a festive, tropical touch. Match the serviettes to the brightly coloured tablecloth.
  • In place of regular tea or coffee, try a tropically-flavoured tea. Good choices include tropical flower mixtures, pineapple green tea or Rooibos. Flavoured coffees might also be suitable if you can find a fruity variety.
  • Use fruit as decoration as well as for eating. Fruit that has not been cut can serve as perfect decorative pieces, which you can then eat for dessert at another meal.
  • Try adding the fried plantain to the tropical muesli when mixing ingredients for the muesli.
  • There is no harm adding a few tropical pastries in as well, if you so desire.Try pineapple pastries for a more tropically inclined taste.
