Prepare a Steak Like a Steakhouse
If you have ever eaten a delicious steak at a fancy steakhouse, you might have wondered how they get it to taste so good. While a steak house may have a special grilling oven or other accouterments, you can do just as well at home on your gas BBQ!

Steps
- Buy a great steak at a reputable meat market. A good choice is a New York Strip steak or Filet Mignon. Make sure the steak is fresh cut, at least {{safesubst:#invoke:convert|convert}} thick and has a marbled red color. Try to get a USDA Prime or Choice steak however, this surprisingly is not that important
- Trim the steak carefully, leaving only a small rim of white fat around the outside. Put the steaks in a baking pan.
- Gather the ingredients needed: Kosher salt, black peppercorns, horseradish, 1/2 cup of marsala wine per steak,red wine vinegar and 3 whole garlic cloves per steak.
- Crush 1 tablespoon of kosher salt, 1 teaspoon of peppercorns and 3 garlic cloves together for each steak you are preparing using a rolling pin, a small wooden mallet or a mortar and pestle.
- Rub the salt, pepper and garlic mixture forcefully into each steak. Try to get the crushed salt and peppercorns to be pressed into the surface of the meat so that when you grill they remain adhered. Do this on both sides of the steak and on the edges as well.Place the steaks back into the baking pan
- In a small bowl, place 1/2 cup of wine, 2 tablespoons of red wine vinegar and 1 teaspoon of horseradish (white is better) for each steak and mix thoroughly. For two steaks, use a full cup of wine, 4 tablespoons of red wine vinegar, etc.
- Add the wine mixture to the baking pan containing the steaks, cover the pan with plastic wrap and place in the refrigerator for at least one hour. The steaks can be marinated overnight or even a couple of days however it will not improve the taste.
- If you are using a gas grill, turn it up to high and let it heat for at least 15 minutes. The grates should be extremely hot and any grease or leftover food should be ash. Take a grill brush and brush down the grate to remove any food or grease. Heating the grill properly is the single most important step to preparing a steakhouse steak.
- When you are ready to cook, using a grill fork, place the steaks on the center of the hot grill, turn the grill down to medium and place the now empty baking pan with the wine mixture on the top rack of the grill. Make certain that when you close the grill, the pan will stay level on the top rack! Close the top.
- To get a medium steak, allow 12 minutes with the top closed. Do not open the top, move the steak or baste with anything.
- After 12 minutes, open the top and turn each steak over placing the steak in a different place on the grill than where it was. Check the wine mixture on the top grill. If it has evaporated, add another cup or two of wine to the hot pan. Close the top and count off another 10 minutes.
- After 10 minutes, take the baking pan off the top shelf and place the cooked steaks into the wine mixture that remains on the bottom of the pan. Coat both sides of the steak by turning them over once and using an oven glove bring the steaks to table side to coast for 2 minutes in the wine mixture.
- Serve the steaks sliced on a bias about {{safesubst:#invoke:convert|convert}} thick over rice or with a potato.

Tips
- Heat the grill for at least 15 minutes. A hot grill to start is crucial
- Do not open the grill while it is cooking.
- Do not baste or move the steaks while they are cooking
- Adjust the cooking time in one minute increments up or down to achieve well done or rare, However, the time on the first side will ALWAYS be 2 minutes more than the time on the second side.
- Trim the meat properly to avoid flareups and grease fires
- Turn the grill to medium after you place the steaks to cook.
- Get only USDA Prime beef or wagyu, preferably dry-aged. Don't ever marinate a steak. High quality steak needs no seasoning other than salt. Pepper and some herbed butter maybe added after it's cooked.
Warnings
- Remember to use an oven glove when removing the baking pan from the grill- it is HOT!
