Shred Carrots for a Cake

Adding carrots to cake recipes adds moisture to cakes, as well as infusing them with added nutrients. You can shred the carrots using either a grater or a food processor; the process is no different from shredded them for salads.

Steps

Shredding Carrots with a Grater

  1. Peel your carrots.
  2. Hold a box grater in your non-dominant hand and a peeled carrot in your dominant hand.
  3. Place the carrot against the side of the grater that has the smallest holes. The length of the carrot should be against the side of the grater.
  4. Grate the carrot using a downward motion. Make sure to keep your fingers and hands away from the sharp edges of the grater.
  5. Discard the carrot piece when it becomes so small that you can no longer grasp it as you shred.
  6. Repeat the process with additional carrot pieces until all of your carrots are shredded.
  7. Add the carrots to your cake batter according to the recipe instructions.

Shredding Carrots with a Food Processor or Blender

Using a food processor or blender takes much less time than grating the carrots by hand.

  1. Place your peeled carrot on a cutting board and cut each into three or four pieces. Smaller pieces will be easier for your food processor or blender to handle.
  2. Place the pieces in the food processor or blender. Attach the cover securely.
  3. Turn the machine on and shred the carrots until they reach the desired size and texture. Do not shred them for too long, or they will turn into a puree. You want your carrots to have the look of coarse sawdust or pencil shavings.
  4. Remove the cover and scoop the carrots into your cake batter using a plastic spatula. Fold the carrots into your cake batter according to the recipe instructions.

Tips

  • Choose carrots that have a uniform color and skin that is free of cracks.
  • Store carrots in your refrigerator by wrapping them in a paper towel and placing them in a plastic resealable freezer bag. Carrots will keep for up to one month in the refrigerator.
  • Avoid carrots that have blemishes or soft spots or carrots that have become limp.
  • The thicker the carrots, the easier they will be to shred by hand with your grater.
  • For long-term storage, cover the carrots with sand and store them in a dark, well-ventilated place.

Warnings

  • Do not store your carrots near fruits like apples or pears. Apples and pears give off ethylene gas as they ripen, which can speed up the decaying process and cause your carrots to spoil.
