Use Garlic Scapes
Garlic scapes are the tender stems and flower buds found on a garlic plant. Harvested in later spring/early summer (June, northern hemisphere or December, southern hemisphere), they are are soft, tender, and curly.
Steps
- Check that the scape is curled. If the scape is straight, it will be tough and inedible. The scape must be curled, with a yellow-green stalk and a white, tender bulb.
- Trim off any tough ends, or stringy pieces. Remove any yellowed flower tips.
- Add to dishes. Garlic scapes are great for salads or for cooked food.
- Raw - the garlic scapes will taste hot and peppery.
- Cooked - the garlic scapes will mellow and taste much sweeter.
Tips
- Store the scapes in the refrigerator, wrapped in a paper towel and placed inside a plastic bag. They will stay good for up to 3 days.
