Bake Plain Muffins

Sometimes, all you really want is a simple, delicious plain muffin. While they might not be as fancy as the gourmet muffins featured in bakeries these days, they will still bring a smile to a face and a happiness to your belly. All you need are the right ingredients and a healthy appetite.

Ingredients

Plain vanilla muffins:

  • 1 cup (125g) self rising flour
  • 3/4 cup (180 ml) milk
  • 1/2 cup (100g) sugar
  • 1/2 teaspoon of vanilla essence
  • 1-2 normal egg(s)
  • 1 teaspoon baking powder
  • 2 tablespoons (30g) butter

Plain muffins:
This recipe will yield 12 muffins:

  • 1 egg
  • 2 cups of all-purpose/plain flour
  • 1/2 teaspoon salt
  • 1 cup milk
  • 4 teaspoons baking powder
  • 2 tablespoons cooking oil
  • 2 tablespoons sugar
  • Butter (for greasing)
  • Frosting (optional)

Steps

Plain Vanilla Muffins

  1. Preheat to 170ºC/325ºF.
  2. You need a bowl and a fork to mix with.
  3. Add flour, milk, sugar, and baking powder.
  4. Mix for 1 to 2 minutes. Then add the butter and egg(s).
  5. Add a teaspoon of vanilla.
  6. Grease the muffin tray.
  7. Pour mixture evenly.
  8. Put in oven for 15-17 minutes.
  9. Take out, then leave to cool.
  10. Finished.

Plain Sugar Muffins

  1. Preheat the oven to 425 degrees (or hot).
  2. Measure 2 cups of flour. Sift it.
  3. Put the sifted flour, baking powder, sugar and salt into a bowl. Mix the dry ingredients together with a wooden spoon.
  4. In another bowl, beat the egg until it is fluffy.
  5. Add the milk and oil into the egg. Stir.
  6. Pour the egg mixture into the dry ingredients. Stir while pouring. The dough should be lumpy, so don't stir the batter too much.
  7. Grease the muffin pan lightly with butter or margarine.
  8. Fill each muffin cup two-thirds full with the muffin batter.
  9. Bake for 20 minutes at 425 degrees.
  10. Remove from the oven. Let the muffins cool. Frost the muffins if you like or leave them plain. Most of all, enjoy!

Tips

  • Add either toppings or sprinkles.
  • If the muffins do not bake in the allotted 20 minutes, add about a 5 minutes to the baking time.
  • Ask for an adult's help if you've not been taught how to bake yet.

Warnings

  • Use appropriate caution when handling the oven-heated tray or pan. Wear oven mitts.
  • When the muffins come out, don't touch them until they've cooled down.
