Make Muffins with Pancake Mix

Ingredients
- Simple pancake mix muffins
- 2 cups pancake mix
- 2/3 cup milk
- 2 eggs
- 1/2 cup maple syrup
- Pancake mix from scratch muffins
- 2 cups all-purpose/plain flour
- 3 tablespoons granulated sugar
- 1 1/2 teaspoons baking powder
- 1 teaspoon baking soda
- Pinch of salt
- 2 cups buttermilk
- 1 egg
- 1/4 cup of melted butter
- Maple syrup, slightly warmed
- Sweet pancake mix muffins
- 3 cups (680g) pancake mix
- 1 cup (225g) sugar
- 2 1/2 cups (600 ml) water (an possibly a little extra to form batter, eyeball it)
- Shortening or margarine
Steps
Simple pancake mix muffins
- Preheat the oven to 180ºC/350ºF. Prepare a muffin pan with nonstick spray or cupcake cases.
- Add the pancake mix to a mixing bowl. Pour in the milk, eggs and maple syrup. Mix to combine.
- Transfer the batter to the muffin pan. Using a spoon or scoop, fill the muffin holes about two thirds each.
- Place in the oven. Bake for 13 to 15 minutes. The muffins are ready when a toothpick inserted comes out clean.
- Allow to cool. Serve fresh.
Pancake mix from scratch muffins
- Preheat the oven to 180ºC/350ºF. Prepare the muffin pan, either by spraying with nonstick baking spray or lining with cases.
- A mini muffin pan is best for this mixture, allowing you to dip them in maple syrup for eating.
- Sift the flour into a mixing bowl. Add the sugar, baking powder, baking soda and a pinch of salt. Whisk together.
- In another bowl, add the buttermilk, egg and butter or oil. Stir to combine.
- Transfer the liquid mixture into the dry ingredients. Stir while adding it. Leave to sit for 3 minutes.
- Using a spoon or scoop, place batter into the muffin pan holes. Fill about half way for each muffin.
- Place the muffin pan in the preheated oven. Bake for 13 to 15 minutes. The muffins are done when a toothpick inserted into the muffin comes out clean.
- Serve. Use warmed maple syrup to dip the muffins into.
Sweet pancake mix muffins
- Gather the ingredients and kitchen equipment listed.
- Grease your muffin pans with shortening or margarine, or use paper muffin cups.
- Preheat oven to 350ºF/180ºC.
- Mix 3 cups pancake mix, 2 cups sugar and about 2 1/2 cups water together. You should end up with a thick consistency like pancake batter.
- Fill muffin cups half full.
- Bake for 15 to 18 minutes or until center springs back to touch.
- Finished.
Tips
- Cut up small pieces of fresh fruit and add.
- You may add extra pieces such as chocolate chips or fruit.
- You can add 1/2 cup cocoa for chocolate muffins.
- Yogurt is good in muffins; you may want to add less water and cook a little longer.
- You can substitute confectioner's sugar for granulated sugar.
- You can add other ingredients for different flavors; experiment! You can also add 2 or three scrambled eggs and bacon bits or sausage pieces for breakfast.
- Use silicone muffin cases or pans to make it easier to use; no need to spray or line.
