Make Rice Bran Muffins
How to make rice bran muffins. These are good for you and delicious too.
Ingredients
- 1 box cornmeal self-rising mix that lets you add your own egg, oil and liquid.
- 1 cup of rice bran
- 1 cup of oat bran
- 3/4 cup of milk, almond milk, juice, or water (any liquid is fine). If necessary, sweeten to taste with fruit juice concentrate.
- 1/4 cup of extra virgin olive oil
- 2 whole eggs or three egg whites, or 1/2 16 oz. tub of tofu liquefied in blender with the 3/4 cup of liquid or milk mentioned above.
- Chopped nuts--walnuts (omega 3's), almonds, pecans, pistachios, etc.
Steps
- Smooth some olive oil over a {{safesubst:#invoke:convert|convert}} square baking pan or muffin tins or muffin paper baking cups.
- Fill the muffin pan almost to the rim with the mixture of all the ingredients above.
- Bake at 350 degrees until light brown and dry in the center, about 45 minutes to an hour.
Tips
- When you add extra flour or meal to a box of cornbread mix, the cooking/baking time increases. So bake until the center of the muffin or 'cake' is no longer mushy liquid.
- If desired, add chopped walnuts or almonds to the batter or chopped dates or raisins.
