Ingredients
For the Doughnuts:
- ½ cup butter, softened
- 1 egg
- ½ teaspoon salt
- ½ teaspoon vanilla
- ⅔ cup brown sugar
- ⅔ cup vanilla yogurt
- ⅔ cup crushed pineapple, drained (reserve juice)
- ⅔ cup shredded carrots
- 2 teaspoons cinnamon
- ½ teaspoon nutmeg
- 1 ½ teaspoons baking powder
- 1 ½ teaspoons baking soda
- 2 cups flour
For the Frosting:
- 4 ounces cream cheese
- 4 tablespoons butter
- 2 tablespoons pineapple juice (from the reserved drained juice)
- ¾ cup powdered sugar
- ½ cup chopped walnuts
Steps
- Preheat the oven to 375°F (190°C).
Making the Batter
- Mix the wet ingredients. In a large bowl, beat the sugar and butter with a stand or hand mixer.
- Incorporate the yogurt, egg, and vanilla into the bowl.
- Add the pineapple and carrots last. Mix everything thoroughly.
- Mix the dry ingredients. Use a medium bowl to combine the cinnamon, flour, baking soda, baking powder, salt, and nutmeg with a metal wire whisk.
- Incorporate the two bowls. Sift the dry ingredients into the wet ingredient bowl.
- For the best results and easier stirring, sift a small amount at a time between stirring.
Baking the Doughnuts
- Fill a doughnut pan. Add the batter to the cavities of the pan, about ½ full.
- Bake the doughnuts for 10 minutes.
- Allow the doughnuts to cool. Leave them in the pan for a few minutes.
- Transfer the doughnuts to a wire cooling rack. Set aside for about 15 to 20 minutes.
Making and Applying the Frosting
- Combine the frosting ingredients together (except the walnuts). In a small bowl, use a metal wire whisk to whip everything thoroughly until you achieve a smooth mixture.
- Dip the doughnuts into the frosting.
- Garnish the doughnuts. Before the frosting sets, sprinkle some chopped walnuts around.
