Make Coffee Brownies

Ingredients
For the Brownies:
- 1/2 cup salted butter
- 1 cup sugar
- 2 squares unsweetened baking chocolate
- 1-1/2 tsp instant coffee
- 2 tbsp hot water
- 2 eggs
- 1 tsp pure vanilla extract
- 1/2 cup flour
- A pinch of salt
For the Icing:
- 1 tbsp salted butter
- 1/2 cup icing (powdered) sugar
- 1 tbsp unsweetened cocoa powder
- 1/2 tsp instant coffee
- 1/2 tsp pure vanilla extract
- 1 tbsp hot water
Steps
Make the Brownies
- Preheat the oven to 325°F (160°C).
- Simmer a pot of water. Set a metal or glass bowl over the pot (or use a double-boiler).
- Add 1/2 cup of butter, the regular sugar, and chocolate to the bowl. Stir frequently until the butter and chocolate have melted.
- Dissolve 1 1/2 teaspoons of instant coffee in 2 tablespoons of hot water.
- Add the coffee. Pour into the melted butter and chocolate, and mix until it is smooth.
- Remove from heat. Remove the chocolate mixture from the heat and let cool until barely warm.
- Add the eggs. Whisk in the 2 eggs plus 1 teaspoon of vanilla when the chocolate mixture has cooled.
- Mix flour and salt in a separate bowl.
- Whisk this into the chocolate mixture until it is smooth.
- Spread the chocolate mixture out into a greased baking pan.
- Bake the mixture in the center of the oven for 25-35 minutes, or until the top is just set.
Make the Icing
- Combine 1 tbsp butter, 1/2 cup icing sugar and 1 tbsp cocoa powder in a small bowl.
- Mix in the 1/2 tsp instant coffee, 1/2 tsp vanilla and 1 tbsp hot water.
- Stir until smooth.
- Ice the brownies in the pan while they are still hot.
- Let the brownies cool. Cut into pieces to serve.
- Finished.
