Make Coffee Brownies

Coffee and chocolate are two flavors that are simply meant to be together, but it's not always convenient to carry around a mocha for that quick fix of deliciousness. Enter the wonderful taste of coffee brownies! Not only are they great to have while on the run, they make a welcome addition to any gathering. We'll show you how to whip up a batch!

Ingredients

For the Brownies:

  • 1/2 cup salted butter
  • 1 cup sugar
  • 2 squares unsweetened baking chocolate
  • 1-1/2 tsp instant coffee
  • 2 tbsp hot water
  • 2 eggs
  • 1 tsp pure vanilla extract
  • 1/2 cup flour
  • A pinch of salt

For the Icing:

  • 1 tbsp salted butter
  • 1/2 cup icing (powdered) sugar
  • 1 tbsp unsweetened cocoa powder
  • 1/2 tsp instant coffee
  • 1/2 tsp pure vanilla extract
  • 1 tbsp hot water

Steps

Make the Brownies

  1. Preheat the oven to 325°F (160°C).
  2. Simmer a pot of water. Set a metal or glass bowl over the pot (or use a double-boiler).
    • Add 1/2 cup of butter, the regular sugar, and chocolate to the bowl. Stir frequently until the butter and chocolate have melted.
  3. Dissolve 1 1/2 teaspoons of instant coffee in 2 tablespoons of hot water.
  4. Add the coffee. Pour into the melted butter and chocolate, and mix until it is smooth.
  5. Remove from heat. Remove the chocolate mixture from the heat and let cool until barely warm.
  6. Add the eggs. Whisk in the 2 eggs plus 1 teaspoon of vanilla when the chocolate mixture has cooled.
  7. Mix flour and salt in a separate bowl.
    • Whisk this into the chocolate mixture until it is smooth.
  8. Spread the chocolate mixture out into a greased baking pan.
  9. Bake the mixture in the center of the oven for 25-35 minutes, or until the top is just set.

Make the Icing

  1. Combine 1 tbsp butter, 1/2 cup icing sugar and 1 tbsp cocoa powder in a small bowl.
  2. Mix in the 1/2 tsp instant coffee, 1/2 tsp vanilla and 1 tbsp hot water.
    • Stir until smooth.
  3. Ice the brownies in the pan while they are still hot.
  4. Let the brownies cool. Cut into pieces to serve.
  5. Finished.
