Make Crispy Apple Tart

Surprisingly quick and easy, this recipe for a crispy apple tart makes a tasty change to the usual apple dessert and is also a treat for the eye! Delight in creating and then savouring this delectable crispy apple tart.



Ingredients

  • 180 g / 6 oz puff pastry, thinly rolled into a circle 30cm/ 12" in diameter
  • 30 g / 1 oz butter, cut into cubes
  • 4 Granny Smith apples, peeled
  • 2 Tbsp sugar
  • 2 Tbsp apricot jam
  • 2 Granny Smith apples, peeled and diced
  • ½ tsp cinnamon powder
  • 85 g / 3 oz sugar

Steps

  1. Make the apple filling. Place a wide saucepan on a medium heat and put in the diced apples, along with the sugar. Heat and stir until they start to break down. You can mash them with the back of the spoon to help the consistency break down.
  2. Keep stirring until most of the liquid has evaporated. Then turn off the heat and add the cinnamon powder.
  3. Continue to stir and mash the apple mixture for about a minute more, then set aside.
  4. Preheat the oven to 230°C, 450°F or gas mark 8.
  5. Cut the apples. Take one of the peeled apples and cut off the sides without cutting into the core. Discard the core.
  6. Cut the apple pieces into thin wedges and repeat this with the remaining apples.
  7. Build the apple tart. Place the puff pastry circle on a baking tray and spread the apple filling evenly over its surface.
  8. Layer the apple wedges in a circle carefully around the side and finish off with an arrangement in the centre.
  9. Cover with sugar and butter. Sprinkle a little sugar over the top of the tart. Finish up by placing on various small knobs of butter.
  10. Bake the tart. Place the tart into the preheated oven and bake for approximately 25 minutes. After this time, or earlier if browning quickly, remove.
  11. Heat the apricot jam. Put the apricot jam into a small saucepan and add 2-3 tablespoons of water. Heat on a medium temperature and stir together until the jam liquefies. Remove from the heat.
  12. Glaze with the jam. Using a brush, paint the surface of the tart with the liquefied jam. This will give it a glazed, shiny look, and, of course, adds to the flavour.
  13. Serve.

Tips

  • If you cannot get apricot jam, try another type that you feel goes well with the apple flavour. Try to avoid jams with pips or seeds though, as these will look odd on the tart.
  • Store uneaten parts of the tart in the fridge, covered to prevent the transfer of refrigerator odours.
