Make Pear Relish (sweet)
Making pear relish is an overnight process but it tastes wonderful on a warm buttered biscuit! Adapt the cooking time to the tenderness of the pears for optimum flavor.
Ingredients
- 8 pounds pears
- 10 sticks cinnamon (approx. 2" length)
- 2 tablespoons allspice
- 6 cups red wine vinegar
- 1/2 cup - 1 cup honey to taste
Steps
- Wash, peel, core, and chop pears into half inch cubes.
- Tie sticks of cinnamon and {{safesubst:#invoke:convert|convert}} allspice in a cheesecloth.
- Place cubed pears in a saucepan, barely cover with water and bring to a boil over medium heat.
- To the pears add spices tied in cheesecloth, red wine vinegar, and 1/2 cup to 1 cup honey (depending on the sweetness of the pears, or sweeten to taste).
- Boil for 5 minutes, simmer until pears are tender - do not overcook!
- Let set overnight.
- The next day, drain the syrup (juice) off and remove the spice bag.
- Bring the syrup to a boil in a small saucepan over medium heat.
- Pack fruit in hot, scalded pint jars.
- Pour hot syrup over pears, leaving {{safesubst:#invoke:convert|convert}} headspace.
- Seal and process 10 minutes in a boiling water bath. Or store in refrigerator, or package in plastic containers and freeze.
