Make Cucumber Salad
Cucumber salad is often served during summer when cucumbers are plentiful. The salad also makes a refreshing do-ahead dish as it can be made ahead. Cucumber salad is reminiscent of fresh pickles.

Ingredients
- Cucumbers in vinegar salad
- 2 cucumbers, European type if possible
- 1 cup water
- 1 cup sugar
- 1 cup white vinegar
- ¼ teaspoon white pepper
- ¼ teaspoon salt
- Cucumber, lime and peanut salad
- 2 cucumbers, long
- 1 salad onion
- Pepper, to taste
- Handful of peanuts, chopped
- 1 lime, juiced
- Coriander (cilantro), fresh
- Salt, to taste
Steps
Cucumbers in vinegar salad
- Slice cucumbers as thin as possible.
- Combine water, sugar, white vinegar and white pepper.
- Pour over cucumber slices.
- Let chill at least 4 hours in the refrigerator.
- Drain cucumbers before serving.
- Serve in a pretty bowl.
Cucumber, lime and peanut salad
- Dice the cucumbers. Chop the onion finely.
- Mix the chopped ingredients together in a salad bowl.
- Mix the the peanuts and lime juice together. Add salt to preference. Tip into the salad bowl and mix to coat the ingredients.
- Add shredded or torn fresh coriander (cilantro) to top off the salad.
- Serve immediately. This salad tastes best when eaten soon after creating.
Tips
- You can add sliced red or white onion to the salad. This makes a nice variation.
- Take a fork and run the tines along the cucumber rind before slicing. Run the tines vertically leaving "stripes" of green rind.
- Serve the salad with sprigs of fresh dill as garnish.
