Make KFC Coleslaw
You already have the chicken, but what about a side dish? Whip up some KFC-style coleslaw to go with it and tuck in.

Ingredients
- 1 cups cabbage, shredded
- 1/4 cup carrot, shredded
- 1/3 cup sugar
- 1/2 tsp salt
- 1/8 tsp pepper
- 1/4 cup milk
- 1/2 cup mayonnaise
- 1 1/2 tbs white vinegar
- 2 1/2 tbs lemon juice
Steps
- Place the shredded carrots and cabbage in a large bowl.
- Combine the rest of the ingredients in another bowl; blend well with a fork or whisk.
- Pour the dressing from the second bowl on top of the carrot/cabbage in the first bowl and mix gently until combined.
- Cover bowl with clingfilm or a lid. Refrigerator for at least two hours. Stir the slaw again just before serving.
Tips
- Use Splenda instead of sugar to reduce calorie content.
- Refrigerate the coleslaw overnight, if possible, for optimum flavor. Note: Cole slaw will keep for about a week in the refrigerator.
- Use light or fat-free mayonnaise to reduce fat.
