Make KFC Coleslaw

You already have the chicken, but what about a side dish? Whip up some KFC-style coleslaw to go with it and tuck in.

Ingredients

  • 1 cups cabbage, shredded
  • 1/4 cup carrot, shredded
  • 1/3 cup sugar
  • 1/2 tsp salt
  • 1/8 tsp pepper
  • 1/4 cup milk
  • 1/2 cup mayonnaise
  • 1 1/2 tbs white vinegar
  • 2 1/2 tbs lemon juice

Steps

  1. Place the shredded carrots and cabbage in a large bowl.
  2. Combine the rest of the ingredients in another bowl; blend well with a fork or whisk.
  3. Pour the dressing from the second bowl on top of the carrot/cabbage in the first bowl and mix gently until combined.
  4. Cover bowl with clingfilm or a lid. Refrigerator for at least two hours. Stir the slaw again just before serving.



Tips

  • Use Splenda instead of sugar to reduce calorie content.
  • Refrigerate the coleslaw overnight, if possible, for optimum flavor. Note: Cole slaw will keep for about a week in the refrigerator.
  • Use light or fat-free mayonnaise to reduce fat.
