Make Evaporated Milk "Ice Cream"

Don't have an ice cream maker? Looking for a sneaky way to feed your kids some extra calcium? Here's a proven "Mom" recipe that fits the bill. Follow these directions and you'll have homemade evaporated milk "ice cream".

Ingredients

Method 1:

  • 2 cups evaporated milk
  • 2/3 cup sugar
  • 1 envelope unsweetened drink mix, such as Kool Aid

Method 2:

  • 1 can evaporated milk
  • 1 package jello (jelly) (or gelatin/e)
  • 1 package (standard) powdered drink mix (or fruit purée of choice)

Steps

  1. Pour evaporated milk into a mixing bowl.
  2. Chill the evaporated milk until almost frozen. When you see frozen edges around the bowl, you know that it is ready to whip.
  3. Chill the beaters in the freezer while waiting for the milk.
  4. Remove the chilled bowl of milk and the beaters.
  5. Whip the partially frozen evaporated milk until it is nicely fluffy.
  6. Add sugar and Kool Aid and whip until the mixture is stiff.
  7. Spoon the mixture into a resealable container.
  8. Freeze for 3 to 4 hours.
  9. Fill Host a Kid's Ice Cream Party or serve as a simple dessert.

  1. Partially freeze the can of evaporated milk.
  2. Make the drink mix. Mix it with half the recommended amount of slightly warmed water to dissolve. Allow to cool before adding.
    • If using fruit purée, make this up instead to the equivalent of the drink mix.
  3. Add the package of jello or gelatin/e to the partially frozen evaporated milk. Mix.
  4. Pour in the cooled drink mix. Stir to combine.
  5. Beat the whole mix until it turns thick and fluffy.
  6. Pour the mix into a freezer-proof container. Place in the freezer. Let it freeze for 3 to 4 hours.

Tips

  • Use yogurt in place of evaporated milk. Less sweet, and a bit healthier.
  • Failures are still edible. Experiment as much as you like.
