Make Matzoh Brei

Matzoh Brei (also spelled Matzah Brei, Matzo Brei, or Matza Brie) is one of the great traditional Passover holiday breakfasts. This is traditionally a Passover breakfast, but it can be enjoyed all year long.

Ingredients

For each serving:

  • Two eggs
  • One full sheet of matzoh
  • Dash of salt to taste
  • Butter or margarine for frying

Steps

  1. Moisten the matzoh. Start by breaking up the matzoh in about 4-5 pieces. Do not make them very small. Hold the matzoh under the water for a second. You do not want to soak the matzoh, you just want to soften it so it absorbs the beaten eggs.
  2. Add the eggs. Crack the eggs into a large soup bowl or a mixing bowl
  3. Fry in butter, oil, margarine, or fat in a frying pan over a low fire. It fries fast so watch it and turn it over once,and serve on a platter. You might notice that the example in the picture is cut in quarters to make it easier to turn and serve. Keep the heat down and check regularly so you don't burn it.
    • Alternatively, you can fry it as you would scrambled eggs. Stir with a wooden spoon, as you would scrambled eggs until the mixture is cooked. The eggs will look dry.
  4. Serve. Transfer to a plate, sprinkle with sugar if you'd like, and serve while hot.

Tips

  • Use any kind of matzoh
  • The matzoh does not get crisp. It only get cooked to a point where the eggs do not glisten and looks cooked.
  • For a lunch or dinner dish along with soup and a salad add thin slices of kosher salami to the egg soaked matzoh before frying.
  • Do not allow the the matzoh to soak in water. Hold it for a second under the cold water to moisten so the eggs will penetrate. Break up the matzoh and add it to the beaten eggs. Use a fork to stir it in the beaten egg in the bowl.

Warnings

  • For the Jewish Holidays buy the matzoh marked "Kosher for Passover"
  • Instead of sprinkled sugar some might like to add jelly
