Make McDonald's French Fries

Among the many many food items McDonald's carries, the fries are one of, if not the most, popular. All employees should know how to make them at some point. Making a batch of fries is an extremely easy feat once you know how, and can be started at step one.

Steps

  1. Gather a batch of fries. This can be done by placing a fry basket underneath the fry hopper, or manually from the freezer.
    • The fry hopper is a machine that dispenses the appropriate amount of fries automatically when you place the basket underneath. It can be adjusted for small, medium, or large shots.
    • If done manually all you have to do is grab a bag from the freezer and fill the basket with as much as you need. If busy nearly to the top, if slow you can get away with doing about half or less.
  2. Place the basket into the fryer. Ensuring it is on the fries option hit the start button. They will take about 3 minutes to deep fry.
  3. Duty the fries. About halfway through the fryer will prompt you to 'duty' or lift the basket out of the fryer, give it a shake, and put it back. To make sure none clump or stick together. Hit the start button again to clear this message.
  4. Lift from the fryer. When it beeps again tilt the basket upwards with the handle going over your shoulder, but not touching you, so most of the oil can drain back into the vats.
  5. Dump into the warmer. Giving it another quick shake, dump it into a clear section of the warmer.
  6. Salt the fries. Overturning the salt dispenser will give a single appropriate shot of salt.
  7. Mix the fries. Using the fry scoop mix the salt into the fries.
  8. Open a box or bag. Using the fry scoop, dump fries inside until it's full. Make sure that the box/bag is stuffed, but all the fries are standing upright.

Tips

  • Fries are good for exactly seven minutes after frying. The fryer will prompt you to qual check, or to check the quality of your fries after seven minutes pass.
  • To make unsalted fries, follow all steps above, but place the new batch on a clean tray and scoop them directly into a box/bag. Whatever you don't use for unsalted, add to the warmer and salt.
  • To make a basket of fries, fill a medium box twice and dump into a boat/basket. Per McDonald's regulations all baskets must be made to order or fresh so place a basket in the fryer the second you know you have a order of them.
  • Basket of fries should go in a large (C) bag all by itself with nothing underneath or on top of it.
  • Make sure to clean out the warmer every now and again to avoid over salting the fries. You can do this with a paper towel or a plastic bag.
  • Check the fry hopper often. It can dwindle fast during busy times, and there's nothing worse than needing a basket down immediately and having to run all the way back to the freezer for a bag of fries.
    • If your store has a mini freezer near the fry hopper to keep fries, ensure to keep this stocked as well.

Warnings

  • Some workers might try to tell you to dump the unsalted fries straight from the basket into the scoop, to make unsalted, instead of using a tray. This is really dangerous, though, as both the fries and oil is extremely hot. This should only be done by more experienced workers with good coordination. Use caution.
  • Try not to use fries after seven minutes. They get old in even that short amount of time, and customers will be able to taste this.
