Make Mexican Homemade Pickles

Use the following steps to make Mexican homemade pickles.

Steps

  1. Peel the skin off the cucumbers, making sure to remove all traces of skin. No skin should be left.
  2. Slice the cucumbers in medium to thick slices. Slice thinly enough so that you can taste them, but not too thick that you have to bite into them.
  3. Cut all four lemons in large slices. This makes it easier to squeeze the juice out.
  4. Squeeze all the lemon over the cucumbers. Squeeze as hard as you can, so that no juice is left.
  5. Sprinkle salt all over the cucumber slices, and let them sit for two hours. This is a form of marination. Place them in your refrigerator.
  6. Remove after two hours and enjoy. You can also drain them, if you like.

Tips

  • Try substituting the lemons with limes.
  • Consider using a lemon squeezer.
  • To give it some heat, add a spicy sauce to the pickles.
