Make Mexican Homemade Pickles
Use the following steps to make Mexican homemade pickles.
Steps
- Peel the skin off the cucumbers, making sure to remove all traces of skin. No skin should be left.
- Slice the cucumbers in medium to thick slices. Slice thinly enough so that you can taste them, but not too thick that you have to bite into them.
- Cut all four lemons in large slices. This makes it easier to squeeze the juice out.
- Squeeze all the lemon over the cucumbers. Squeeze as hard as you can, so that no juice is left.
- Sprinkle salt all over the cucumber slices, and let them sit for two hours. This is a form of marination. Place them in your refrigerator.
- Remove after two hours and enjoy. You can also drain them, if you like.
Tips
- Try substituting the lemons with limes.
- Consider using a lemon squeezer.
- To give it some heat, add a spicy sauce to the pickles.
