  • 1 boneless chuck roast (3-4 pounds)

  • 1 cup sliced onion
  • 1/4 cup red wine
  • 3 cloves crushed garlic
  • 2 bay leaves
  • 1 can cream of mushroom soup
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon beef bouillon granules
  • 3/4 cup water

Wine-Free Pot Roast with Olives and Raisins

  • 1 blade cut chuck roast (2 pounds)
  • 2 teaspoons cumin
  • 2 teaspoons salt
  • Vegetable oil
  • 1 medium chopped onion
  • 5-6 cloves smashed garlic
  • 1 cup tomato juice
  • 1/3 cup balsamic vinegar
  • 1 cup cocktail olives
  • 1/2 cup raisins

Slow-Cooker Pot Roast

  • 5 1/2 pounds chuck roast
  • 1 1/4 cups water
  • 2 cans cream of mushroom soup
  • 1 package (1 ounce) dry onion soup mix

Steps

Southern-Style Pot Roast

  1. Preheat oven to 350 degrees Fahrenheit (176 degrees Celsius).
  2. Mix salt, pepper, and garlic powder together in a small bowl. Rub the seasoning onto both sides of each roast.
  3. Heat oil in a large skillet under medium-high heat. Add the roast and sear it on both sides until browned. Place the meat into a roaster pan.
  4. Add onions and garlic to skillet. Cook for 1 to 2 minutes and allow the vegetables to absorb the juice that was left behind by the meat. Place garlic, onions, and bay leaves into the roaster pan with the meat.
  5. Combine wine, mushroom soup, Worcestershire sauce, and beef bouillon in a bowl. Add water, and then pour the mixture over the roast.
  6. Cover the pan with aluminum foil. Bake for 3 to 3 1/2 hours. Meat should be tender and cooked fully through.

Wine-Free Pot Roast with Olives and Raisins

  1. Preheat oven to 200 degrees Fahrenheit (93 degrees Celsius). Place a large skillet or frying pan over high heat for 1-2 minutes.
  2. Rub both sides of the meat with salt and cumin. Brown both sides of the meat on the hot skillet and then remove from pan.
  3. Coat the pan lightly with vegetable oil and then add onion and garlic. Allow to cook until onion is soft. Add vinegar, tomato juice, olives, and raisins. Bring the mixture to boil and then reduce the liquid by half.
  4. Place the meat on a roaster pan and pour the mixture over it. Cover with aluminum foil and cook for 3 to 3/2 hours. When finished, you should be able to easily push a fork through the meat.
  5. Allow to cool and serve.

Slow-Cooker Pot Roast

  1. Add cream of mushroom soup, dry onion soup mix, and water to a slow cooker. Place the roast inside of the slow cooker and cover the meat with the soup mixture.
  2. Cook for 3-4 hours on High setting. For slower-roasted meat, cook for 8 to 9 hours on Low setting.
  3. Remove from pot. Serve and enjoy!



Tips

  • Add carrots, onions, and other vegetables to your pot roast for extra flavor and added nutrition.
  • If you are old enough, enjoy your pot roast with a glass of Merlot.
  • Beef round roasts can also be used to make pot roast. Choose round tip, round rump, or bottom round cuts.
  • Chuck pot roasts have more fat and are more flavorful than round roasts. Common cuts are shoulder, chuck arm, and chuck blade.
